Hotel Saint Augustine seeks an enthusiastic Assistant Director of Food and Beverage

The Role: 

The Assistant Director of Food & Beverage supports the Director of Food & Beverage in leading all Food & Beverage operations across the hotel, including restaurants, bars, lounges, in-room dining, and special event operations. This role is responsible for ensuring exceptional guest experiences, driving operational excellence, developing high-performing teams, and contributing to the commercial success of all F&B venues.

The ideal candidate is a passionate hospitality professional with strong luxury hotel experience, a hands-on leadership style, solid business acumen, and a commitment to delivering memorable guest experiences while fostering a positive and collaborative team culture.

Key Responsibilities: 

         Support the Director of Food & Beverage in the day-to-day management of all F&B operations.

         Ensure consistent execution of brand standards, service excellence, and operational procedures across all outlets.

         Lead by example through active floor presence and hands-on management.

         Monitor service quality, cleanliness, product presentation, and overall guest satisfaction.

         Conduct regular operational walk-throughs and ensure compliance with hotel standards and local regulations.

         Drive continuous improvement through training, coaching, and performance follow-up.

         Collaborate closely with outlet management teams to establish clear performance expectations and accountability.

         Conduct regular team meetings, performance reviews, and training sessions.

         Support succession planning and talent development initiatives.

         Partner with the Director of Food & Beverage and Outlet Managers to drive revenue growth and profitability.

         Identify business opportunities and develop innovative promotions, seasonal programs, and revenue-generating initiatives.

         Monitor financial performance, labor productivity, costs, and departmental KPIs.

         Analyze sales trends and guest feedback to improve outlet performance and market positioning.

         Assist in budget preparation, forecasting, inventory management, and cost-control initiatives.

          Champion a guest-centric culture throughout all F&B operations.

         Build strong relationships with guests and ensure personalized service experiences.

         Proactively address guest feedback and service recovery

          Work closely with Culinary, Sales & Marketing, Rooms Division, Events, and other hotel departments to achieve operational and commercial goals.

         Participate in leadership meetings and contribute to hotel-wide initiatives

         Assist in preparing operational reports, forecasts, and business reviews.

         Ensure accurate scheduling, payroll administration, and staffing plans.

         Maintain proper inventory, purchasing, and cost-control procedures.

         Support implementation of company policies, brand standards, and operating procedures.

         Perform Manager-on-Duty duties as assigned.

Based upon fluctuating demands of the operation and to exceed customer expectations, it may be necessary to perform a multitude of different functions not specifically related to this position. This person may be expected to perform other tasks and duties as needed or as directed.Furthermore, employee responsibilities andjobdescriptions are subject to review and revision. 

 

Experience Required: 

  • Minimum 5 years of progressive Food & Beverage leadership experience in luxury or lifestyle hotels.
  • Experience overseeing multiple outlets, including restaurants, bars, lounges, and in-room dining operations.
  • Experience with luxury hotel brands.

Experience Preferred: 

  • Hyatt experience is preferred but not required.
  • Bachelor's degree in Hospitality Management, Business Administration, or a related field preferred.
