Job description

Idaho Falls Community Hospital is looking for a Prep Cook After Hours to join our team!
JOB SUMMARY: After Hours Prep Cook will work under the direction of the After-Hours Chef de Tournant to prepare items needed for recipes and back stock, to prepare items for the salad bar and Vision Cooler, and to prepare soups for the following day. The After-Hours Prep Cook will also have responsibilities in maintaining the cleanliness of the kitchen.

DUTIES AND RESPONSIBILITIES:
  1. Assist in the preparation of food for café/restaurant customers, patients, and special functions.
    • Use food safety techniques in accordance with FDA and Health Department standards, including but not limited to:
      • Proper hand washing
      • Temperature monitoring & recording of all foods & refrigeration
      • Proper storage and handling techniques for food are used (such as labels, dates, covers and first in/first out rotation, etc.)
      • Approved hats or hairnets are worn in food preparation areas
    • Prepare food back stocks to be prepared for the following days' orders in a timely manner
      • Make sure items are prepared daily up to established par values and dated with appropriate expiration dates and making sure to follow FIFO procedures
      • Pull needed items from freezer in adequate time for product to thaw following proper thawing procedures
    • Prepare items for the Vision Cooler and ensure that all items are properly stocked, rotated and dated for the upcoming day
    • Prepare Oatmeal and Sausage gravy and ensure that the daily soups for both patients and the café are panned and ready to cook.
    • Check in the deliveries, put away all delivered items in their designated spots, use FIFO.
    • Organize all storerooms (freezers, fridges, dry storages) at least twice a week
  2. Participate in maintaining the cleanliness of the kitchen and café facilities
    • Use the daily and deep cleaning assignment schedules according to the set requirements of the hospital, District Health Dept, State of Idaho and Food & Drug Administration
    • Maintain equipment utilized in a clean, safe, and sanitized condition
    • Clean all frequently used equipment weekly (ovens, pizza oven, behind the grills, fryer, etc.)
  3. Participate in the maintenance of department records
    • Record food and refrigeration temperatures in temperature logs according to department procedures and policy
    • Use daily production records, recording amounts of prepared food and left over to assist in planning appropriate food quantities
    • Document all waste on the waste log
  4. Participate in continued education, training and maintenance of Food Handlers' Permits
    • Maintain current Food Handlers' Permit
    • Complete the standard Idaho Falls Community Hospital (IFCH), Nutritional Services Department and position-specific Health Stream educations in a timely manner
  5. Participating in intra and interdepartmental meetings
    • Participates in a short Huddle meeting under the direction of the Sous Chef and/or Nutritional Services Manager to review important information, held as needed
    • Attend the regularly scheduled Nutritional Services staff meetings
      • Meetings are mandatory and will count as an absence unless you are excused for vacation or illness/leave
        • If a meeting is missed, the notes from that meeting must be carefully read - it is the responsibility of the individual to seek clarification on any information that is not understood
    • Attend additional meetings as needed
    • Checks emails regularly for any updates/changes throughout the week-abiding by hospital of checking email a minimum of twice per week
  6. Be a team player
    • Follow policies and procedures of IFCH and the Nutritional Services Department
    • Participate in the development and attainment of departmental goals
    • Contribute to the overall functioning of IFCH and the department by effectively performing the duties assigned to you as well as assisting others where and when needed
    • Contribute to a positive work culture in the department as well as throughout IFCH
    • Assist in Quality Assurance Performance Improvement Projects as requested, including data collection
