Job description

Role Summary:

Accurately and efficiently cook meats, fish, vegetables, soups, and other foods.  Properly prep and portion products prior to cooking while keeping a clean and safe work environment.  Perform duties in other areas of food service including preparing meals and camp cooks at overnight hunting lodges utilizing 'field to table' ingredients, such as wild game.

What to Expect in the Role:

   Maintain an orderly, clean, and sanitized work environment in the kitchen.
   Maintain personal hygiene and professional appearance.
   Ensure all food and other items are stored properly.
   Monitor inventory, utilize FIFO rotations, and notify when there are shortages.
   Prepare a variety of meats, seafood, poultry, vegetables, and other foods using industry standard cooking methods and equipment. 
   Cook by open fire, with cast iron, in remote camp houses.
   Properly portion meal items according to reservations.
   Participate in team building exercises, cooking competitions and continuing education courses. 
   Act in a professional and cordial manor with peers and supervisors. 
   Treat our guests with grace and respect.


What We Will Be Needing From You:

   Skilled in operating kitchen equipment.
   Skilled in various cooking techniques.
   Must know and follow sanitation procedures.
   Ability to work on a team and communicate effectively. 
   Has a proficient grasp of reading comprehension and math skills.
   Ability to multitask and move quickly in an organized manor. 
   Must have a valid driver's license in good standing, the ability to be an approved driver for the company and safely operate vehicles.
   Must obtain a Texas Food Handler's Certification.
   At least one year's experience and knowledge working in a commercial kitchen.  
   Experience with preparation of traditional menus of South Texas including wild game, seafood, and Mexican food, preferred.
