Work with a purpose!ย Management and Training Corporation proudly operates the Texas Civil Commitment Center in Littlefield, Texas.ย Join our team of career-minded professionals as you lead the food service department and help those in our care make positive, lifelong changes.

What you'll do:ย You'll directly supervise foodย handlers/cooksย andย clients assigned toย theย food service area. You'll be responsible for theย management ofย food services, whichย includes providing wholesome and nutritious meals, plans inย compliance with Management & Training Corporation (MTC) and Texas Civil Commitment Office (TCCO) directives.

Essential Functions:

  1. Ensureย dining, service andย foodย preparation areas andย equipment areย maintained inย aย cleanย and sanitary manner; andย ensures compliance with sanitation, safety and healthย regulations.
  2. Inspectย foodย forย quantity,ย quality, andย temperature;ย assureย proper storage andย useย ofย inventory; and supervise monitoring and logging of temperatures.
  3. Instruct staff andย clients onย safety rules andย regulations, proper use of soaps and chemicals; sanitary procedures, foodย preparation and portion control, operation of food service equipment; advise onย food requirements andย recipes; andย calculateย monthly,ย quarterly, semi-annual andย annualย foodย requirements; and prepare and approve requisitions for food items, supplies, and equipment.
  4. Prepare daily menus; ensuresย adequate controls areย maintained over food preparation quantities and portionย sizes; prepareย menusย forย specialย dietย requirements ofย clients; andย review cook'sย worksheets for accuracy.
  5. Oversee theย department budget ensuringย theย department operatesย efficiently andย withinย budget; prepare budget reports and reconcile the budget monthly.
  6. Plan, assign and supervise work of staff and clients; review staff and client work schedules for adequateย coverage; andย establish andย administer orientationย andย departmental in-serviceย training programs.
  7. Provideย staffย andย clientย training,ย evaluateย performance andย implement organizationalย andย personnel changes as approved by the facility administrator and coordinated withย human resources prior to implementation.
  8. Regular andย predictableย attendanceย isย required.
  9. Promote theย developmentย ofย positive social skills through modeling appropriate behaviors and intervening whenย inappropriate behaviors areย observed; provideย regularย feedback toย staffย regarding social skills procedures and intervention techniques.
  10. Maintainย accountabilityย ofย staff, clientsย andย property;ย adhereย toย safetyย practices.

It is expected that the incumbent shall perform other duties as assigned within his/her scope of work as determined by management.

Education and Experience Requirements:

  • Graduation fromย anย accredited seniorย highย schoolย or equivalent orย GED.
  • Two (2) yearsย full-time,ย wage-earning experience in correctional, commercial, orย institutional food service preparation or management.
  • Mustย have valid foodย handler's certificate.ย 
  • Validย driver's license inย the state ofย Texas with anย acceptable driving record required, unless waived by management.
