WORK SCHEDULE: First Shift
Position Summary:
Responsible for cleaning, cutting, portioning, and merchandising all seafood products.
Essential Functions:
  • Cleans, trims, slices, debones, and portions product for processing according to order specifications.
  • Inspects and removes defects, bruises, or blemishes from the product.
  • Accurately reads and comprehends all customer specific instructions.
  • Performs Quality Control checks and communicates with supervisors and managers regarding any defects.
  • Separates seafood portions and byproducts into specified containers and seals containers.
  • Uses knives, cleavers, and other equipment to perform seafood cutting and trimming.
  • Weighs product and tags containers for weight and contents.
  • Follows the company's detailed product specifications.
  • Performs other duties as assigned.

Knowledge / Skills / Abilities:
  • Must have working knowledge of production equipment.
  • Ability to portion all seafood products in an accurate and timely manner.
  • Ability to reduce processing costs by cutting and sizing portions accurately while continuing to meet customer specifications.
  • Ability to problem solve in terms of trimming and product substitutions.
  • Ability to work in a fast paced, high pressure, challenging environment
  • Must be a team player and possess a positive attitude.
  • Ability to effectively communicate, both written and verbally, in English.

You are required to provide your most recent employment experience for your application to be considered complete.

  • Weighs product and tag containers for weight and contents.
  • Reduces processing costs but accurately cuts and sizes portions with good yields and meets customer specs.
  • Accurately reads and comprehends all customer-specific instructions.
  • Perform quality control checks and communicate with supervisors and managers regarding any defects.
  • A fish cutter must follow and maintain all Quality Assurance, HACCP, SQF requirements, and Occupational Health and safety regulations and ensure all employees under their department follow all the regulations.
  • Maintaining cleanliness and hygiene of the work area and the cutting knives and equipment.
  • Perform any other duties as required.
