Job description

JOB SUMMARY/PURPOSE:

Maintain kitchen work areas and restaurant equipment and utensils in clean and orderly condition in order to provide Fairfield Glade standards for all dining guests.

PRINCIPAL RESPONSIBILITIES:

1. Scrape food from dirty dishes and wash them by hand or place them in racks or on conveyor to dishwashing machine.

2. Hold inverted glasses over revolving brushes to clean inside surfaces.

3. Wash pots, pans, and trays.

4. Sweep and mop kitchen floor.

5. Wash worktables, walls, refrigerators, and meat blocks.

6. Segregate and remove trash and garbage and place it in designated containers.

7. Steam clean or hose out garbage cans.

8. Sort bottles and break disposable ones in bottle crushing machine.

9. Polish silver using burnishing machine tumbler, chemical dip, buffing wheel, and hand cloth.

10. Transfer supplies and equipment between storage and work areas.

11. Set up banquet tables.

12. Wash and peel vegetables.

13. Load or unload trucks picking up or delivering supplies and food.

MINIMUM EDUCATION:

High School or GED

EXPERIENCE:

Proficient knife skills, 1-3 years as dishwasher in busy restaurant preferred.

COMPUTER SKILLS:

N/A

EQUIPMENT USED:

Burnishing machine, revolving brushes, crushing machine buffing wheel, dishwasher, kitchen utensils. Standard Commercial Kitchen equipment.

WORKING ENVIRONMENT:

Fast-paced, hectic kitchen with extreme temperatures; long hours and tense conditions caused by volume of business (often sporadic); must be able to follow set procedures as well as make last minute changes to accommodate kitchen needs. Must use extreme caution around kitchen equipment.

COMMUNICATION REQUIREMENTS:

Active listening skills and ability to articulate information.

PHYSICAL REQUIREMENTS:

Normal speech, hearing, and vision. Reaching, lifting of 50 pounds, (more with assistance). Walking and standing for extended periods of time.

SAFETY:

Follow all FGCC safety programs, safety guidelines, policies and procedures. Wear, use and enforce all FGCC personal protection equipment (PPE) as needed on specific jobs and tasks.

Be aware of chemical safety and be familiar with all pertinent Safety Data Sheets (SDS) of chemicals which are used in the workplace.

Follow all FGCC safety rules including all local, state and federal regulations as they pertain to work at FGCC.

OTHER REQUIREMENTS:

Ability to work on several tasks simultaneously; maintain composure when dealing with stressful situations; get along well with others.
