THE ROLE

The Director of F&B/Retail owns the entire hospitality and retail experience at SDC โ€” dining, beverage, events, and the club's retail offering โ€” and builds the team to deliver it. You set the standard, the systems, and the culture behind every plate, every pour, and every purchase a member makes.

This is senior leadership in a startup. You'll hire your leadership team, build the department P&L, source vendors, and define what F&B and retail mean at a club with no ceiling on ambition โ€” as comfortable setting three-year strategy as you are solving a Saturday-night service problem.

You'll design the food-and-beverage program alongside the Executive Chef, build the beverage and wine program and craft the member communications that bring it all to life. On the retail side, you'll shape a branded merchandise and pro-shop assortment โ€” buying, brand partnerships, seasonal and promotional planning, merchandising, and inventory โ€” that reflects the SDC brand, developing branded product with the brand team and managing to margin. You'll partner with the Event Manager on every member event and own the numbers across every outlet.

Because this is a private membership club, member relationships sit at the center of the role. You'll set a standard of anticipatory, preference-driven hospitality, engage members personally, and make sure every touchpoint โ€” from a morning coffee to a milestone celebration โ€” reinforces why they joined.

ESSENTIAL JOB FUNCTIONS
  • Full-scope F&B and retail leadership across dining, beverage, events, and merchandise
  • P&L ownership and budgetary analysis โ€” budgeting, forecasting, margin, and cost control across outlets
  • Beverage and wine program development, including inventory and pricing
  • Oversight of liquor licensing and California alcohol-service laws
  • Innovating with food and beverage โ€” sourcing and partnering with the highest-quality ingredients and vendors
  • Retail strategy โ€” buying, brand partnerships, and year-round, seasonal, and promotional assortment planning for branded merchandise and a pro shop
  • Developing branded product lines with the brand team and sourcing at trade shows to keep the assortment fresh
  • Retail math and reporting โ€” margins, maintained margins, markdowns, sell-through, and sales / budget analysis
  • Visual merchandising, display standards, inventory and stock control, receiving, member billing, and a personalized shopping experience
  • Full employee lifecycle โ€” recruiting, training, performance management, and offboarding
  • Vendor sourcing, contract negotiation, and partner management
  • Building service standards, SOPs, and systems from the ground up
  • POS, inventory, and hospitality technology implementation (TEI, Pacesetter)
  • Developing member communications and written collateral for F&B
  • Anticipatory, preference-driven member hospitality built on deep knowledge of each member
  • Member engagement, relationship-building, and retention
  • Ensuring compliance with employment law and fair, equitable treatment of staff
EXPERIENCE
  • 7+ years in senior F&B leadership with direct P&L accountability
  • Experience in a luxury hotel, private club, or members' club environment
  • Demonstrated success building or scaling a multi-outlet hospitality operation
  • Track record hiring, developing, and leading department-level managers
  • Beverage / wine program and retail oversight โ€” buying, merchandising, and margin management
  • Experience developing branded or private-label merchandise a plus
  • Budgetary analysis capability โ€” preparing and analyzing financial data
  • Experience implementing hospitality systems and technology
  • Advanced Microsoft Office (strong Excel), retail POS, and strong writing for member communications
  • Bachelor's degree in hospitality, business, or equivalent experience preferred

  • On-site, remote desert location; weekend and event-day presence required

PHYSICAL DEMANDS

Position requires walking, standing, and giving direction most of the working day; must be able to stand and exert well-paced mobility for up to 4 hours in length. Must be able to bend, stoop, squat and stretch to fulfill cleaning tasks. Must be able to lift up to 15 lbs. on a regular and continuing basis. Requires grasping, writing, standing, sitting, walking, repetitive motions, bending, climbing, listening and hearing ability and visual acuity. Talking and hearing occur continuously in the process of communicating with members, supervisors and subordinates.
