Job description

The Director of Wine & Beverage reports to the Club Manager, serves as a key member of the Club’s leadership team and is responsible for leading all front-of-house and back-of-house beverage operations. This individual will establish and maintain service standards, train and develop team members, and create exceptional dining and social experiences that enhance the overall member experience. The Beverage Department operates in all areas of the Club.

The ideal candidate thrives in a fast-paced, member-focused environment and is highly organized, service-driven, adaptable, and capable of managing multiple priorities simultaneously while maintaining a polished and professional presence. The role requires independent thinking, self-motivation, and long-range vision.

 Essential Duties and Responsibilities:

  • Manage, lead and inspire the Beverage Department throughout the employee life cycle
  • Clearly plan and communicate all Beverage programming for the Club
  • Assess staff performance in all phases of service and job functions, ensuring that all procedures are carried out to departmental and Club standards.
  • Develop operating and labor budgets and achieve budgeted or better results
  • Collect data and create forecasts for Capital Expenditures
  • Conduct all meetings for Wine Committee in conjunction with member chairs
  • Plan and execute wine dinners, tastings, and educational events in partnership with the Wine Committee
  • Participate in any additional Committee and Board activities as required
  • Meet regularly with vendors, suppliers, and distributors to evaluate products for inclusion to the wine, spirit, and beer programs.
  • Act as an ambassador for the Club and Wine Committee in all dining and beverage-related events on and off-premises with utmost professionalism
  • Field queries concerning beverage recommendations for banquet events
  • Oversee beverage training and education
  • Be present at all wine-related events and be available to act as a knowledgeable liaison between all wine and spirit professionals and the membership.
  • Build strong relationships with Club members, co-workers, vendors, and guests.
  • Approve weekly work schedules authored by Wine & Beverage Manager(s) in accordance with staffing guidelines and labor forecasts, adjusting schedules throughout the week to meet the business demands
  • Act as the subject matter expert of all liquor brands, beers and non-alcoholic selections available in outlets, designated glassware and garnishes for drinks, all bar menu items, preparation method/time, ingredients, garnishes, presentation and prices
  • Maintain complete knowledge of;
    • and comply with all departmental policies, procedures, and standards
    • correct maintenance and use of beverage-related equipment
    • and strictly abide by state liquor regulations (TABC)
  • Assist with establishing par levels for supplies, liquor, beer, wine and equipment
  • Maintain all beverage and bar areas in a clean and safe manner
  • Ensure compliance with all state and federal requirements and laws

Qualifications

  • Minimum 5 years of progressive leadership experience in beverage operations, preferably in a private club or luxury hospitality environment.
  • Strong knowledge of beverage operations, wine programs, wine cellar management, purchasing, and inventory management
  • Strong leadership presence with a hands-on, team-oriented management style
  • Extensive wine knowledge and a demonstrated passion for wine education, programming, and member engagement
  • Experience creating and executing wine-focused member experiences including wine dinners, tastings, educational events, and vineyard partnerships
  • Strong organizational, time management, and multitasking skills with the ability to manage multiple priorities simultaneously
  • Excellent written, verbal, and interpersonal communication skills with strong attention to detail and proofreading ability
  • Proficiency in Microsoft Office Suite and internet-based systems; experience with FOH point-of-sale systems and inventory management software
  • Professional, service-oriented approach with a strong member and guest focus
  • Ability to work a flexible schedule including evenings, weekends, holidays, and extended hours based on event needs
  • Experiencing developing and opening F&B establishments or outlets preferred
  • WSET Level 3 Award in Wines, Certified Sommelier certification through the Court of Master Sommeliers, or equivalent advance wine education preferred
