Position Summary
We are seeking a motivated and detail-oriented Assistant Dietary Manager to support our skilled nursing facility's dietary department on a full-time basis. Working under the direction of the Dietary Manager, the Assistant Dietary Manager assists with nutritional care, daily food service operations, regulatory compliance, and staff supervision. This role is an excellent opportunity for a credentialed dietary professional looking to grow within a long-term care environment while contributing to the health and well-being of our residents.
Licensure & Credentials
Required:
• Active Certified Dietary Manager (CDM, CFPP) credential issued by the Association of Nutrition & Foodservice Professionals (ANFP), OR currently enrolled in an accredited CDM program with completion within 12 months of hire
• Must meet Georgia Department of Community Health (DCH) requirements for dietary services in long-term care facilities
• Current ServSafe Food Manager Certification (or ability to obtain within 90 days of hire)
Preferred:
• Registered Dietitian (RD/RDN) licensed in the State of Georgia
• CPR/First Aid certification
Key Responsibilities
Nutritional Care Support
• Assist with nutritional assessments, diet order tracking, and resident care plan documentation under the supervision of the Dietary Manager or RD
• Monitor residents for changes in nutritional status and report concerns to the Dietary Manager and nursing staff
• Help maintain MDS (Minimum Data Set) dietary sections and ensure documentation accuracy
• Participate in interdisciplinary Care Plan meetings as directed
Food Service Operations
• Supervise daily meal production, tray assembly, and timely delivery to ensure accuracy, quality, and resident satisfaction
• Assist in maintaining diet spreadsheets, tray cards, and nourishment logs
• Monitor food temperatures, portion sizes, and texture modifications to ensure compliance with therapeutic diet orders
• Support inventory management, stock rotation, and supply ordering as directed
Regulatory Compliance
• Assist in maintaining compliance with CMS F-Tag requirements (F800–F812) and Georgia DCH regulations
• Support department preparation for state surveys and unannounced inspections
• Maintain HACCP protocols and ensure proper food safety and sanitation practices are followed at all times
• Assist with completion of temperature logs, cleaning schedules, and other compliance documentation
Staff Supervision & Training
• Supervise dietary aides and cooks in the absence of or as delegated by the Dietary Manager
• Assist with onboarding and training of new dietary staff on food safety, diet modifications, and resident-centered service
• Support a positive, team-oriented department culture that prioritizes resident dignity and satisfaction
Qualifications
• Minimum 1 year of experience in a dietary, food service, or nutrition role in a skilled nursing or long-term care setting preferred
• Knowledge of therapeutic diets, texture modifications, and long-term care dietary regulations
• Familiarity with CMS survey process and Georgia state dietary compliance standards
• Strong communication, organizational, and time management skills
• Ability to lead a team and remain calm in a fast-paced environment
• Basic proficiency with computers and dietary/EHR software preferred
• Ability to stand for extended periods and lift up to 35 lbs as required
