Bread Baker — Artisan Bakery & Café

Pay: $23–$25 per hour, based on experience
Job Type: Full-time
Location: Palisades Village, Pacific Palisades, CA
Schedule: Approximately 3:00 a.m.–10:30 a.m.; weekend and holiday availability required

About the Position

We are seeking an experienced and dependable Bread Baker to join our artisan bakery and café in Palisades Village. This position is responsible for producing consistently excellent artisan breads while maintaining high standards for quality, timing, organization, cleanliness, and food safety.

The ideal candidate has professional bread-baking experience, understands naturally fermented doughs and long fermentation, and takes pride in producing beautiful, high-quality bread each day.

Responsibilities
  • Produce sourdough, country loaves, focaccia, baguettes, rolls, specialty breads, and other bread products.
  • Evaluate overnight doughs and adjust production based on fermentation, temperature, and dough condition.
  • Scale, divide, preshape, shape, score, proof, and bake breads.
  • Mix and prepare doughs, starters, preferments, and levain for future production.
  • Monitor dough temperature, bulk fermentation, proofing, and baking.
  • Operate deck ovens, convection ovens, mixers, proofers, and other bakery equipment safely.
  • Maintain consistency in loaf size, shape, color, texture, crumb, and flavor.
  • Follow recipes, production sheets, portion standards, and daily bake schedules.
  • Adjust production based on sales, inventory, special orders, and management direction.
  • Coordinate oven and workspace usage with the Pastry Baker and Baker Assistant.
  • Properly label, date, rotate, and store ingredients and prepared products.
  • Maintain production, waste, temperature, and inventory records.
  • Clean and sanitize work areas, tools, mixers, racks, proofers, and ovens.
  • Follow food-safety, sanitation, allergen-control, and workplace-safety procedures.
Qualifications
  • Professional bread-baking experience is required.
  • Experience with artisan bread, sourdough, naturally leavened dough, and long fermentation is highly desirable.
  • Knowledge of dough temperature, hydration, fermentation, proofing, shaping, scoring, and oven management.
  • Ability to follow weight-based recipes accurately.
  • Ability to evaluate dough by sight, touch, temperature, and fermentation stage.
  • Strong organizational and time-management skills.
  • Ability to work independently and communicate effectively with the bakery team.
  • Ability to read and communicate in English sufficiently to follow recipes, ingredient labels, safety instructions, and production directions.
  • Reliable transportation and dependable attendance for a 3:00 a.m. shift.
  • Weekend and holiday availability.
  • Food-handler certification or ability to obtain one promptly after hiring.
  • Willingness to accept feedback and follow established production standards.
Physical Requirements
  • Ability to stand for extended periods.
  • Ability to lift and carry up to 50 pounds.
  • Ability to bend, reach, push, pull, and move loaded bakery racks.
  • Ability to work safely around hot ovens, mixers, sharp tools, flour dust, and refrigerated areas.
