Boucherie B. Poirier is looking for an experienced butcher to join our production team. We are seeking someone with strong experience in breaking down full carcasses and primal cuts, particularly beef, veal, pork and lamb, as well as some experience working with poultry.

Main responsibilities Break down, debone, trim and cut carcasses and primal cuts; Prepare a full range of beef, veal, pork and lamb cuts; Perform some chicken cutting and preparation; Portion products according to customer and company specifications; Maximize carcass yield and minimize product loss; Inspect products for quality, appearance and compliance; Safely operate knives, saws and other meat-processing equipment; Keep workstations, tools and equipment clean and organized; Follow all food-safety, sanitation, health and workplace-safety procedures. Qualifications Significant experience as a butcher, industrial butcher, meat cutter or deboner; Demonstrated ability to break down full carcasses; Strong knowledge of beef, veal, pork and lamb cuts; Efficient, precise and quality-focused; Physically capable of working in a refrigerated production environment; Reliable, independent and able to work as part of a team; Able to follow cutting specifications and achieve yield targets.
