Job description

Apostolic Christian Restmor in Morton, IL is looking for an evening Cook!

Position Summary:

Prepares and cooks a variety of meals for residents and staff utilizing recipes and ingredients provided.  Provides oversight over evening dietary staff.

Essential Job Duties:

  • Prepares and cooks a variety of menu items including regular and special diet entrees, side dishes, sauces and dessert items using standard recipes and cooking techniques.
  • Evaluates varieties of raw and cooked food items to decide if they are fresh and whether cooked foods are done by their appearance, consistency, texture, and temperature.
  • Plans, coordinates, and times work assignments to assure food items are prepared and ready for service and are at the proper temperature according to established standards.
  • Prepares an entire meal which requires coordinating the cooking of several items with different cooking times to produce a complete meal on time and at the proper temperature.
  • Provides supervision over evening dining services staff, involving Director of Dining Services as needed.
  • Adjusts standardized recipes for large quantity cooking.  Utilizes standard formulas to adjust ingredients in standard recipes when altering number of servings required.  Proportions meal items on plate ware in support of resident and staff meal service.
  • Provides assistance in kitchen management.  Maintains rotation of food inventories to prevent spoilage.  Labels food that is opened before it is stored.  Completes food production worksheets as needed.  Documents hot food temperatures assuring temperature standards are met and takes corrective action as needed. 
  • Uses, maintains, and cleans tools and specialized equipment such as vertical steamer, deep fat fryer, griddle, steam jacket kettle, mixer, meat slicer, and convection oven.  Washes dishes, glasses, and flatware as needed.  Operates a mechanical dishwasher.  Cleans equipment, storage areas, walls and ceilings, floors, work tables, walk-in refrigerators, and duckboards.  Sweeps and mops floors.  Disposes of garbage and trash.  Carries supplies between storerooms, kitchen, and serving areas.
  • Other duties as assigned

Qualifications:

  • High school graduate or equivalent
  • Previous quantity cooking experience in commercial food service environment preferred
  • Experience with cooking in hospitality foodservice/healthcare environment preferred
  • Able to read and understand recipes, weights, and measures
  • This is a full-time role requiring candidates to work four weekdays, every other weekend, and a holiday rotation.  Shift are traditionally 11:00am-7:00pm.

Physical Demands:

Walking and standing most of the work shift. Frequent stooping, stretching, bending, and reaching.  Lifting up to 50lbs. Pushing/pulling up to 100lbs.  Daily exposure to potentially hazardous equipment such as knives and slicer and some exposure to potentially hazardous chemicals. Exposure to hot environment and extreme temperatures in walk-in refrigerators and freezers.
