What is a busser?

Bussers are restaurant staff members responsible for cleaning and resetting tables, refilling water glasses, and assisting servers to ensure smooth restaurant operations. They help clear away used dishes, silverware, and glassware after guests finish eating, and often support servers by delivering food and supplies. Bussers play a key role in maintaining a clean, welcoming dining environment and helping restaurants provide efficient customer service.

What are the key skills and qualifications needed to thrive as a busser, and why are they important?

To thrive as a Busser, you need strong attention to detail, physical stamina, and the ability to multitask efficiently, with most positions requiring a high school diploma or equivalent. Familiarity with point-of-sale (POS) systems, dishwashing equipment, and basic food safety protocols is often beneficial. Excellent teamwork, communication skills, and a positive attitude help Bussers stand out in busy restaurant environments. These skills ensure smooth restaurant operations, quick table turnover, and a positive dining experience for guests.

What do bussers do?

Bussers are people who work in the restaurant and catering industry. During the food service, they are in charge of clearing dishes when the patrons have finished a course and bringing the dirty dishes to the dishwasher. They may also assist the wait staff as needed by bringing appetizers or other plates to the tables. At the end of meal, bussers replace the linens and settings on the tables. Depending on the venue and services provided, they may be responsible for ensuring clean linens and tableware are well-stocked, and also cleaning, mopping, and trash duties. They are an essential part of the hospitality team and a vital part of providing a great guest experience.

What are some common challenges bussers face during busy shifts, and how can they manage them effectively?

During peak hours, bussers often juggle multiple tables, quickly clearing and resetting spaces while maintaining cleanliness and supporting servers. Managing these demands requires strong time management, attention to detail, and teamwork skills. Effective bussers communicate closely with servers and kitchen staff to prioritize urgent tasks, stay organized, and help ensure a smooth dining experience for guests. Remaining calm and adaptable during rush periods is key to success in this fast-paced environment.

Job description

Chef Thomas Keller’s Yountville restaurant, Ad Hoc, is seeking enthusiastic and capable individuals who are passionate about food, beverage and hospitality to join the team as a Busser. Pay range includes estimated tips - base rate is $16.90 per hour.

Opened in 2006 and originally intended as a temporary concept, Ad Hoc presents the American comfort food of Chef Keller's childhood in a casual dining setting. The restaurant's daily-changing four-course menu is served family-style, capturing the conviviality of home.

Qualified candidates will possess a minimum of 1 year of previous experience in a similar role.

Chef Keller’s collection of restaurants is founded on a culture of mentorship and provides a solid foundation of skills to support our profession. We are proud to offer:

  • 401K with no waiting periods and the opportunity to receive up to 4.0% of your salary as matching contributions
  • Competitive health insurance options, with employer contributions toward your premium based on the plan you choose
  • Voluntary plans such as vision, life and AD&D insurance, accident, hospitalization, critical illness plans, pet insurance and long-term disability insurance.
  • Opportunities for growth and advancement
  • Daily family meal
  • Scholarship programs
  • Peer mentorship program
  • Employee discounts at Chef Thomas Keller’s casual properties
  • Gym membership discount

Who we are:

With more than 10 properties and 900 employees, the Thomas Keller Restaurant Group (TKRG) has grown from one restaurant to a large family of businesses.

TKRG proudly represents The French Laundry, Per Se, The Surf Club Restaurant, Bouchon Bistro, Bouchon Bakery, Ad Hoc, and RO Restaurant & Lounge. The properties and people Chef Keller inspires are known for setting new standards in cuisine, service and employment experiences. Our goal is to collaborate with talented restaurant professionals and offer opportunities to learn and grow within the hospitality profession. As we have expanded over time, the expectations that set apart our restaurants have not changed: ensuring that every guest feels special, and every guest experience is exceptional. A guest can walk into The French Laundry or one of the Bouchon Bakeries and have the most enjoyable, unique and memorable experience. A chef will find the same blue aprons and green tape in each of our kitchens—symbols of a common striving for excellence. Outside the kitchens, every action we take must reflect the generosity, nurturing and finesse within. As members of the TKRG family, we have the responsibility to ensure this consistency. Beyond it all is a mission, perhaps summed up best by Chef Keller himself. “To make people happy, one guest at a time,” he says. “That is what cooking is all about.”
