WINNER IS GROWING

WINNER is a Brooklyn-based hospitality group featuring a lively American café, a cozy wine bar, a butcher shop, a Prospect Park kiosk, and our newest flagship café at The Alloy Block in downtown Brooklyn. We serve breakfast, lunch, and dinner to-go with a focus on fresh, high-quality food and genuine hospitality. WINNER is a welcoming space for the community to gather, enjoy great food, and feel at home.

We’re looking for a Bread Baker 1 to join our bakery team and help us produce exceptional bread for WINNER locations and wholesale clients.

This is an excellent opportunity for someone early in their baking career who wants to build strong foundational skills while working alongside experienced bakers in a professional production environment.

THE ROLE

As a Bread Baker 1, you’ll learn the fundamentals of professional bread production while contributing to the daily production of WINNER’s breads.

Working under the direction of experienced bakers and shift leadership, you’ll complete assigned preparation, shaping, baking, finishing, and cleaning tasks while developing your understanding of WINNER recipes, fermentation, quality standards, and production routines.

We’re looking for someone who is curious, dependable, detail-oriented, and eager to learn. You don’t need to know everything, we’re looking for someone who wants to become a better baker every day.

WHAT YOU’LL DO

Bread Production

  • Complete assigned scaling, mixing, dividing, shaping, proofing, baking, and finishing tasks according to WINNER recipes and direction.
  • Accurately measure ingredients and follow established fermentation, timing, and baking standards.
  • Check work at designated quality-control points.
  • Learn the characteristics, specifications, and production sequence of WINNER’s core bread products.
  • Ask questions and seek guidance when dough, fermentation, bake, or finished product differs from the expected standard.

Workstation & Organization

  • Set up, maintain, and break down a clean and organized workstation.
  • Restock ingredients and supplies as directed.
  • Label, date, store, and rotate ingredients correctly.
  • Report low or missing ingredients and supplies.
  • Complete assigned opening, closing, and cleaning duties thoroughly and on time.

Teamwork & Communication

  • Follow the daily production plan and communicate task status, delays, mistakes, and product concerns promptly.
  • Work cooperatively with the bakery and kitchen teams to meet daily production goals.
  • Receive coaching constructively and apply feedback to improve consistency, speed, and technique.
  • Participate in required meetings and training.
  • Contribute to a positive, respectful, and collaborative bakery environment.

Food Safety & Workplace Safety

  • Follow all health, safety, allergen, sanitation, and food-handling requirements.
  • Use bakery equipment only as trained.
  • Report hazards, injuries, damaged tools, and equipment malfunctions immediately.
  • Maintain a clean and safe production environment throughout the shift.
GROWTH & DEVELOPMENT

This position is designed as a foundational role in our bakery team. You’ll have the opportunity to develop your skills across core bread production stations and product lines.

As you grow, you’ll be expected to:

  • Build proficiency across assigned stations and core products.
  • Develop consistency and confidence with professional bread-making techniques.
  • Learn to recognize common production and quality issues.
  • Understand when a problem can be corrected independently and when it should be escalated to a more experienced baker.
  • Demonstrate steady improvement in speed, technique, consistency, and product knowledge.
WHAT WE’RE LOOKING FOR
  • Bakery, culinary, food-production, or related experience preferred; equivalent training or demonstrated interest in baking will be considered.
  • Culinary school or professional baking education is a plus.
  • Ability to follow written recipes, production instructions, and food-safety procedures.
  • Comfort working with weights, measurements, timers, and basic production records.
  • Strong attention to detail.
  • Dependability and a strong work ethic.
  • Curiosity and genuine interest in learning the craft of bread baking.
  • Ability to receive coaching and apply feedback.
  • Cooperative and professional communication style.
  • Ability to work early mornings, weekends, and holidays.
  • Ability to perform the physical requirements of a production bakery, with or without reasonable accommodation.
