- Roll Case - Vegetable prep, sushi rice preparation, and mastering roll production
- Front Case - Fish breakdown, knife work, nigiri and sashimi preparation, creating omakase experiences, and engaging with guests at the sushi bar
- Wheel - Coordinating incoming orders with production while preparing rolls, nigiri, and sashimi
