Il Buco Family is home to restaurants in New York City, The Hamptons, and Ibiza, Spain, as well as an artisanal home line inspired by owner Donna Lennard’s travels throughout Italy. We are a growing hospitality family built around thoughtful food, craftsmanship, hospitality, and a deep appreciation for quality and tradition.

il Buco Commissary/Bakery, the newest member of the Il Buco Family Group, is looking for an experienced Baker to join our Out East Bakery in Hampton, NY (Plank Road).

This is an exciting opportunity for a passionate and professional baker to join a company that values craftsmanship, collaboration, and growth. Our bakery specializes in naturally leavened products made with organic and locally sourced ingredients, and we are looking for someone who is excited to contribute to a high-quality production environment while continuing to develop their skills.

Please note: Due to the bakery’s location and early production schedule, candidates must live within a reasonable commuting distance, have reliable transportation, and have flexible availability, including early mornings, weekends, and holidays.

What You'll Do

Working closely with the Head Baker, you will help lead daily bakery production and ensure that all products meet Il Buco’s standards for quality, consistency, and presentation. You will:

  • Prepare and bake a variety of breads, pastries, cakes, and other baked goods.

  • Mix, scale, shape, proof, laminate, and bake products according to established recipes and production schedules.

  • Manage fermentation and demonstrate a strong understanding of naturally leavened and rustic breads.

  • Work with a variety of doughs, including artisan breads, rye, laminated doughs, croissants, and other pastries.

  • Serve as a knowledgeable resource for the bakery team regarding recipes, ingredients, techniques, and product quality.

  • Monitor and maintain consistent food quality and presentation throughout production.

  • Operate and properly maintain bakery equipment, including ovens, mixers, proofers, and other production equipment.

  • Clean and sanitize equipment and work areas according to established procedures.

  • Follow all food safety, sanitation, and workplace safety procedures.

  • Maintain recipe books and ensure recipes and production standards are followed accurately.

  • Assist with tracking food waste and identifying opportunities to minimize waste.

  • Work closely with the Head Baker to maintain an organized, respectful, and positive work environment.

  • Collaborate with the bakery team to ensure efficient production and timely delivery of baked goods.

  • Support other departments and contribute to the overall success of the Il Buco Family when needed.

Who You Are

You are an experienced, passionate baker who takes pride in your craft and understands that great baking requires patience, precision, consistency, and creativity. You have a strong foundation in artisan baking and are excited to continue learning and growing alongside an experienced team.

You have:

  • A minimum of 3 years of professional baking experience, preferably in a high-volume, upscale, or fine-dining bakery environment.

  • Strong knowledge of rustic breads, fermentation, naturally leavened products, and laminated doughs.

  • Experience working with breads of various types, including sourdough and rye, as well as croissants and other laminated pastries.

  • A strong understanding of baking ingredients, dough development, fermentation, scaling, shaping, proofing, and baking.

  • The ability to operate and maintain professional baking equipment safely and efficiently.

  • A team-focused mindset and a collaborative, respectful approach to working with others.

  • A positive and enthusiastic attitude with a genuine desire to learn, grow, and develop professionally.

  • Excellent communication, organizational, and interpersonal skills.

  • The ability to remain calm, focused, and productive in a fast-paced production environment.

  • The ability to receive direction and feedback positively and apply it effectively.

  • Strong problem-solving skills, adaptability, and the ability to think quickly when production needs change.

  • Professional working proficiency in English is a plus.
