Key Leadership Responsibilities

  • Brigade Leadership: Directly manage, mentor, and inspire a full kitchen team (Sauce, Fry, Line Prep, Breakfast, Garde Manger, Butcher, Broiler, Sauté, and Salad).
  • Culinary Excellence: Supervise daily production of artisanal soups, mother sauces, and innovative daily specials, ensuring flawless execution, garnishing, and flavor profiles.
  • Operational Command: Assume absolute charge of all food outlets, high-end banquet galas, and private member functions in the absence of the Executive Chef.
  • Financial Stewardship: Assist with monthly inventories, menu pricing, rigorous cost controls, and daily raw tracking to maximize efficiency without compromising quality.
