Job description

Hours:  Minimum 32-hour workweek required; days and hours vary
Reports to:  Restaurant Manager / Director of Operations
Pay Status:  Full time; Hourly pay rate
Objective:  To run a successful, profitable restaurant operation while upholding Subway, DSI and Board of Health standards in the manager’s absence.

POSITION PURPOSE:

Uphold and enforce Subway standards as well as DSI policies/procedures; maintain operational excellence; follow-up training and further development of staff; supportive of market business plans; understanding of restaurant’s financial performance.

MAJOR AREAS OF RESPONSIBILITY:

  • Sales/Guest Service
  • Operations
  • Personnel

Sales/Guest Service

  • Meet or exceed budgeted sales goals through:
    • Performing and training exceptional guest service
    • Keeping a clean, bright store – manage through cleaning list
    • Serving the highest quality product:
      • Ensure all products meet food safety specifications
      • Ensure all incoming product is to Subway specifications
      • Ensure all product preparation is to specifications
      • Ensure sandwich and salad preparation is to specifications
    • Working with advertising and marketing representatives on LSM

Operations

  • Manage the restaurant with the Subway Operations Manual as guideline
  • Utilize all charts that are in place
  • Control all costs through daily/weekly paperwork and tracking sheets
  • Attend mandatory staff meetings to keep all employees informed and involved
  • Work varied shifts to have a complete understanding of your restaurant and to improve daily operations
  • Ensure all files are complete and up-to-date, and confidentiality is maintained
  • Teach preventive maintenance and ensure all equipment is in good working condition
  • Perform banking duties in manager’s absence or upon request by Manager or Supervisor:
    • Must provide your own motor vehicle transportation
    • Must provide proof of current motor vehicle insurance
    • Must possess current valid Arizona driver’s license
  • Check restaurant mail box in manager’s absence or upon request by Manager or Supervisor
  • Ability to use POS cash register system, bread oven, manual tomato and vegetable slicers, knives, mop and mop bucket/wringer combination

Personnel

  • Staff restaurant properly to provide excellent guest service
  • Understanding of hiring employees that meet DSI guidelines
  • Knowledge of DSI new hire orientation policy and time record procedures
  • Train all employees to DSI guidelines and expectations; continuous follow-up
  • Provide feedback to Restaurant Manager for employee performance evaluations and/or wage reviews
  • Participate with Restaurant Manager in the appropriate discipline of employees, being consistent and using DSI guidelines
  • Support and enforce all Subway and DSI policies/procedures

PREREQUISITES:

  • Food safety training and ServSafe certification (if applicable)
  • University of Subway certification
  • Management training and certification as required by DSI and Subway Corporate
  • Must work shifts opposite Restaurant Manager
  • Frequent to continuous standing, bending, walking, carrying – climbing on occasion
  • Ability to lift a minimum of 10 pounds regularly and up to 50 pounds occasionally
  • Regular and predictable attendance is essential
  • Assume the position of Restaurant Manager as required
