Job description

Reports to: General Manager

Position Summary: Runs shift with primary responsibility for the management and achievement of profit for all food and beverage operations in the hotel including restaurants, bars, kitchen operations, catering and banquet operations. Always deliver outstanding service and food.

Key Responsibilities:

▪ Schedule properly to ensure staffing levels to meet occupancy and sales demands.
▪ Cover shifts when necessary, in all food and beverages areas.
▪ Use the labor scheduling forecast to assist in the scheduling process.
▪ Supervise all food and beverage staff.
▪ Participate in the hiring process.
▪ Assess and review staff performance and ensure the maintenance of personnel records.
▪ Communicate effectively to staff and management team members – info board, event schedules, BEO’s, and features.
▪ Conduct effective staff briefings.
▪ Ensure good safety practices of staff members and guests. Ensure compliance with business operations and hospitality laws.
▪ Be subject mater expert and reference for all POS systems and other programs required to execute Food and Beverage activities, this includes, but is not limited to, ordering food and beverage, maintaining inventory, etc.

▪ Maintain proper emergency and security procedures.
▪ Follow through on guest complaints, respond quickly and take corrective actions.
▪ Communicate with the leadership team in weekly meetings.
▪ Work with the food and beverage team to ensure food quality.
▪ Prepare monthly inventory – food, beer/wine/alcohol, china, and banquet linen.
▪ Prepare weekly PO and food orders. Must be approved by the General Manager and the Director of

Operations before processing.
▪ Control food costs to maintain “ideal” level.
▪ Work with food distributors for best pricing and food quality.
▪ Maintain standards set by the brand for food quality, presentation, recipe adherence, and kitchen cleanliness.
▪ Continue professional development through brand training.

▪ Provide a professional advisory and executive support to the General Manager to assist in meeting strategic goals.
▪ Any other duties assigned by the General Manager.
