The opportunity

Delaware North's Patina Group is hiring a full-time or part-time Sushi Cook to join our team at Momosan Ramen by Morimoto in Boston, Massachusetts. As a sushi cook, you will be a leader in the kitchen, showcasing your proven experience with a key eye for detail while delivering an exceptional sushi experience to our guests.

What will you do?
  • Prepare high-quality sushi dishes by established recipes and standards.
  • Ensure the freshness and quality of ingredients used in sushi preparation.
  • Handle, slice, and present fish and other ingredients with precision and attention to detail.
  • Collaborate with kitchen staff to maintain an efficient and organized workflow.
  • Maintain cleanliness and sanitation standards in the sushi preparation area.
  • Monitor and manage inventory levels of ingredients.
  • Uphold food safety regulations and practices.
  • May be required to perform other duties as needed to support the overall goals and objectives of the team and organization.
More about you
  • 1-2 years of experience as a sushi cook or similar role is required.
  • In-depth knowledge of sushi preparation techniques.
  • Strong knife skills and precision in handling raw fish and other ingredients.
  • Ability to work in a fast-paced kitchen environment.
  • Excellent communication and teamwork skills.
  • Knowledge of food safety and sanitation regulations.
Physical requirements
  • Ability to stand for extended periods. 
  • Manual dexterity and hand-eye coordination for precise cutting and assembling of sushi. 
  • Ability to lift and carry large pans from ovens or freezers, weighing up to 50 pounds. 
  • Work in a potentially hot and fast-paced kitchen environment. 
  • Pushing and pulling occasionally to move equipment. 
  • Kitchen environment – noise levels may be moderate-to-high.
