The Role and What You'll Do:

This position is responsible for overseeing the Executive Dining Area and Kitchen, preparation of food for Executives and guests, cleanliness and sanitation, and the activities of kitchen personnel.

  • Prepares or directs preparation of food served using established procedures and food in accordance with client specifications and nutritional requirements.
  • Develops recipes and portion specifications in accordance with client tastes, nutritional needs, product specifications, ease of preparation and established procedures and budgetary constraints.
  • Participates in menu planning activities to include the determination of purchasing specifications, product and recipe tasting and menu development.
  • Assures that meals are prepared and delivered in a timely manner and in acceptable quantity and quality.
  • Determines amount and type of food and supplies required for food preparation.
  • Assures all food and other departmental supplies are ordered and received in a timely manner so that adequate inventory levels are maintained to supportvolume or anticipated volume.
  • Ensures that services are provided to clients in a friendly and efficient manner.
  • Ensures that food is prepared and served at the correct temperature and quality.
  • Provides necessary staff development and training to ensure meals are prepared and served in accordance with established policies and procedures.
  • Complies with established sanitation standards, personal hygiene, and health standards. Observes proper food preparation and handling techniques.
  • Ensures that food is stored properly and safely, marking date and item.
  • Ensures that Kitchen and equipment are in good working order to ensure a clean and hazard free work area that complies with the Department of Health, OSHA and Zuffa guidelines.
  • Monitors, documents and oversees the correction of any culinary or sanitation concerns that are below standards or are not functioning properly.
  • Monitors staff to ensure that they are following established safety and infection control policies and procedures.
  • Practices and maintains safe working conditions and practices and ensures that staff does as well.
  • Ensures Executive Dining Room and Kitchen area comply with Board of Health Standards and Regulations.
  • Evaluates and oversees the job performance of kitchen personnel.
  • Sets schedules and specific job duties of kitchen personnel.
  • Maintains an open door policy.
  • Works closely with executives to ensure that all products comply with Management specifications, standards, guidelines and expectations.
  • Other duties as assigned.

You Have These:

  • High school diploma or GED, culinary degree preferred.
  • Minimum of 5 years culinary experience in related field preferred.
  • Minimum of 2 years in fine dining environment preferred.
  • Must have a current Clark County Health Card.
  • Ability to communicate effectively, orally and in writing with individuals in all levels of the organization, but particularly with members of the highest level of the organization.
  • Comprehensive food knowledge, which includes cost control, menu planning, budgeting, training, inventory control and sanitation.
  • Must be able to handle a flexible schedule.
  • Must demonstrate sound judgment and maturity decision-making ability, even in difficult situations.
  • Must possess and demonstrate great attention to detail in order to maintain expected appearance and operating standards.
  • Customer-service driven.
  • Must possess the ability to work hands on in any kitchen environment pertaining to a three meal period in fine dining, butchering, baking soups, stocks, sauces, roasting, sauteing, broiling, grilling and cold food production.
  • Ability to maintain discretion and confidential information.
  • Average level skills with Microsoft Excel, Word and Outlook and ability to learn other computer software programs.
