As the Assistant Executive Steward, you will support the Back of House Executive Team in leading the stewarding team to ensure exceptional kitchen sanitation, cleanliness, and efficient management of non-food equipment and supplies across all casino restaurants and banquet operations. This is a hands-on leadership role focused on maintaining high standards, driving team performance, and ensuring smooth daily operations within the Food & Beverage department.

What You'll Do
  • Assist in recruiting, training, scheduling, and supervising stewarding staff, including dishwashers and cleaners
  • Support daily operations to ensure dishwashing, sanitation, and food preparation areas meet all health and safety standards
  • Help implement and maintain standard operating procedures and preventive maintenance programs
  • Monitor inventory levels of cleaning supplies, chinaware, glassware, and kitchen equipment; assist with ordering and requisitions
  • Ensure kitchen equipment is clean, properly maintained, and stored correctly
  • Enforce compliance with company policies, health regulations, and safety standards
  • Partner with chefs and management to ensure seamless kitchen operations and equipment availability
  • Support banquet and special event setup and breakdown as needed
  • Step in to lead shifts and operations in the absence of the Executive Steward
  • Perform other duties as assigned
