Job description

About Us:

Established in 1963, and situated in the Santa Cruz Mountains on 180 acres of old-growth redwood forest, Roaring Camp Inc. is a heritage tourist railroad that offers two unique journeys. The Bear Mountain excursion offers year around steam train excursions through the old growth redwood forest, while the Santa Cruz Beach Train offers seasonal excursions through the Redwood Forests to the sandy beaches of Santa Cruz.

Responsibilities:
  • Lead the Front: Supervise and mentor both indoor kitchen staff and outdoor BBQ crews to ensure quality and speed.
  • Manage Logistics: Own the daily ordering, stock rotation, and inventory counts to keep food waste low and margins high.
  • Handle Financials: Responsibly manage cash handling procedures, including drawer counts and end-of-shift reporting.
  • Maintain Standards: Ensure every plate meets our standards for presentation and flavor while upholding strict food safety (ServSafe) protocols.
Requirements:
  • Ability to stand and move for long periods of time in a high-heat environment.
  • Must be able to lift and carry up to 40 pounds (e.g., cases of product, BBQ equipment, or large cuts of meat).
  • Experience: At least 3 years of professional cooking experience with strong knowledge of ordering and inventory.
  • Leadership: Proven ability to supervise a diverse team in a high-volume, high-pressure environment.
  • Availability: Must be available to work weekends and holidays, as these are our peak business times.
  • Certification: Current Food Handler Card or ServSafe Certification required.
