General Statement
Culinary Services Division (CSD), a division of Auxiliary Services, provides meals and specialty beverages for over 18,000 customers daily and is an integral part of campus life and the overall college experience. CSD proudly provides Montana State University students with not only a repertoire of various cuisines, cooking styles, and flavors, but a comfortable atmosphere to meet friends, study, and simply relax. The division is comprised of 2 residential dining halls, a commissary kitchen, several retail operations including 4 coffee shops, Chick-fil-A, the Union Market and Bobcat Grill, Brick Breeden Fieldhouse and Bobcat Stadium Concessions, Fork in the Road food truck, MSU Catering, Indulge In-House Bakery, and the Farm to Campus Program.
University Catering provides full catering services for campus and other contracted events. A sample of the 2000+ events worked per year include: VIP meals, banquets, buffets, served meals, coffee breaks, drop-offs, and boxed meals. The number of catered events can be upwards of 15-35 daily.
Duties and Responsibilities
Reporting to the Banquet Manager, the Assistant Banquet Manager is a working supervisory position that assists with managing the catering backhall production, deliveries, and associated personnel.
  • Actively manages the back-hall production area including event set-up, food presentation, service, cleanup activities, and storage of catering items.
  • Ensures client's expectations are met (presentation/service, food quality, etc)
  • Supervises and schedules the 50+ student and temporary staff and assists with directing the Floor Supervisor team
    • Performs duties related to hiring, training, performance management, etc.
    • Oversees 2 Backhall Floor Supervises in their daily duties.
  • Assists with a variety of administrative duties such as student/temporary staff payroll, inventory, supply orders, production sheets, etc.
  • May design, research, and actively set decorations for events
  • Assists clients with facility set-up and coordinates with other campus entities as needed.
  • Participates with the catering team during menu and recipe development.
  • Assists with controlling food and labor costs.
  • Ensures equipment and the catering vehicle fleet is in good repair and operational.
  • Familiar with trending catering ideas and suggests strategies for presentation and service.
  • Ensures compliance with FDA codes and as directed by MSU's Registered Sanitarian for sanitation guidelines and food handling and storage.
  • Steps in to act as the the Banquet Manager during absences to manage the backhall.
  • And actively participates as a member of the team while performing other duties in support of the department's mission.

Required Qualifications - Experience, Education, Knowledge & Skills
  1. Progressively responsible management experience in the food service or hospitality industries or an equivalent combination of relevant education and experience
  2. Supervisory experience coordinating, directing, and evaluating the work of others.
  3. Proficient experience using computers and various software packages.
  4. Extensive experience providing excellent front line customer service to a variety of individuals.

Preferred Qualifications - Experience, Education, Knowledge & Skills
  1. Advanced degree or certificate in the hospitality, culinary arts, or a closely related fields.
  2. Experience executing multiple catering events and food deliveries.
  3. Experience with inventory control.
  4. Experience ordering food and supplies.

  • Possess an 8-hour management sanitation certification or have the ability to become certified.
  • Must have the ability to understand and communicate in English with adequate proficiency to follow directions from supervisor, read and understand safety guidelines and directions to prevent accidents or injuries from occurring, and communicate effectively with customers (staff, visitors, students) by listening and speaking clearly to them.
