Position Title: NUTRITION SERVICES KITCHEN MANAGER I
Department: Nutrition Services
Reports To: Nutrition Services Supervisor
JOB DEFINITION:
Under minimal supervision, the Nutrition Services Kitchen Manager I directs the operation of a self-contained school kitchen or assists an Operations Manager II with a production kitchen. The Nutrition Services Kitchen Manager I performs independent work as part of an overall team effort. The supervisory functions of this position require human relations and communications skills and the ability to direct, guide, and motivate others. The complexity of the work may not be limited to established rules and regulations. The position requires getting along with others and regular contact with students, school staff and the public. The Nutrition Services Kitchen Manager I works under the supervision of the Nutrition Services Supervisor.
ESSENTIAL JOB FUNCTIONS:
  • Assists with writing of menus.
  • Orders food and equipment for the assigned school.
  • Maintains an accurate kitchen inventory for assigned facility.
  • Supervises employees and students assigned to the kitchen.
  • Oversees the preparation of food and makes sure specifications are followed.
  • Oversees the cleaning and storage of all equipment and food supplies.
  • Participates in the Districts accident prevention program.
  • Implements health, sanitation and safety procedures.
  • Instructs in use and care of equipment.
  • Supervises food serving.
  • Assists with recipe standardization, quality and quantity controls.
  • Reports equipment and facilities needing repair.
  • Outlines daily duties and schedules work of kitchen staff.
  • Prepares meals sufficient in quantity to serve daily meal count.
  • Assures an adequate supply of food items for the preparation of future menu dishes.
  • Assists with the opening and closing of the kitchen prior to the beginning and after the ending of each school year.
  • Assures the proficient and timely preparation and serving of daily meals to the central kitchen school as well as the assigned satellite schools.
  • Assures the operation of a cost-effective program by controlling expenses and increasing revenue through promotion of the food service program to achieve increased student participation.
  • Assures the adequacy of supplies and account for all funds collected or expended.
  • Assures the maintenance and cleaning of the cafeteria and kitchen facilities to maximize efficiency and minimize interruptions in service.
  • Assures coordination between satellite schools and the central kitchen.
  • Assures sufficient quality and quantity of food transported to satellite kitchen.
  • Assures food preparation methods in satellite kitchens meet with standardization requirements of the District.
  • Assures that proper procedures are followed for collecting information on lunch counts, menu records, and inventories in each satellite kitchen.
  • Assures accurate counting of cash receipts from ticket and ala carte sales.
  • Provides training for food servers newly assigned to the position and provides daily direction.
  • Fulfills other related duties as assigned.

WORKING CONDITIONS:
Work is performed in kitchen and cafeteria environments. The position requires prolonged standing, repetitive motion, bending, reaching, and lifting or carrying supplies and equipment consistent with assigned duties.
The employee may be exposed to hot surfaces, sharp tools, cleaning chemicals, temperature extremes including ovens and freezers, and wet or slippery floors. The work environment can be fast-paced, particularly during meal service periods.
The employee will have regular interaction with students during meal service and may be required to provide supervision support in the cafeteria or common areas, requiring attentiveness in moderate to high noise environments.
Work follows assigned meal service schedules and requires adherence to food safety and sanitation standards. The role requires attention to detail, teamwork, and the ability to perform tasks efficiently within time constraints. EDUCATION AND EXPERIENCE:
High School diploma and one to two years of advanced education/experience in the specific job requirements. The position requires the application of general principles or techniques and training not normally received in a high school.
The position requires working knowledge of several technical procedures or work activity areas and ability to teach them to others. In-depth knowledge of work-related School District policies and practices is necessary. Proficiency can be acquired in twelve to twenty-four months.
CERTIFICATION AND LICENSING:
  • Obtain and maintain certification under the Oregon School Food Services Certification Plan.
  • Possess or obtain a Food Handler's Permit from Deschutes County or maintain current ServSafe certification.
  • Obtain or possess a valid Oregon driver's license and maintain an insurable status for automobile and liability coverage, as required by the position.
