Job Summary

Operate and maintain cleaning equipment and tools, including the dish washing machine, hand wash stations pot-scrubbing station, and trash compactor. Wash and disinfect kitchen and storeroom areas, and equipment. Use detergent, rinsing, and sanitizing chemicals in the compartment sink to clean dishes. Inspect, pull, and stack cleaned items, send soiled items back for re-scrubbing and re-washing. Rack and spray all racked items with hot water to loosen and remove food residue. Empty and maintain trashcans and dumpster area. Clean and mop all areas. Break down cardboard boxes and place them and other recyclables in the recycle bin.

Supervisory Responsibilities

None.

Duties/ Responsibilities

  • Adheres to all Open Hand safety guidelines, rules and regulations, company policy manual, code of conduct, Good Manufacturing Practices (GMPs) and attendance policy.
  • Assists with maintaining sanitation records conforming to federal/state and departmental guidelines and complies with all health and sanitation regulations.
  • Responsible for the maintenance and cleanliness of ALL culinary equipment, small wares, and areas including coolers, freezers, hallways and pass through, and maintaining a safe and clean work environment and uses equipment only as intended.
  • Clean all dishes, pots, pans, utensils, speed racks and other items to facilitate food service operation.
  • Clean up spilled food, drink, broken dishes, and remove all trash and cardboard.
  • Maintain kitchen floor with regular sweeping and mopping & organize mop room/janitorial supply room.
  • Assist Head Cook in maintaining sanitation of kitchen equipment such as skillets, kettles, combi ovens, chillers etc
  • Regular cleaning and maintenance of kitchen sink area as well as dish washing machine.
  • Assist AM/PM supervisor in opening/ closing of kitchen facility.
  • Ensure enough clean linens including towels and aprons are laundered and meeting daily requirements

Required Skills/Abilities

Ability to read and comprehend simple instructions, short correspondence and memos in English. Ability to write simple correspondence in English. Ability to communicate to all staff and volunteers appropriately.

Education/Experience

  • High school diploma or general education degree (GED) preferred and acceptable reading skills. One year of sanitation experience

Physical Requirements

Employee must be able to lift at least 50 pounds and to stand for long periods of time. The job requires repetitive and continuous intensive physical labor.
