Dough Zone USA is a rapidly expanding multi-state restaurant group with 29+
locations and four commissary kitchens across WA, OR, CA, and TX. As we continue to grow, we are
strengthening our supply chain and purchasing functions to support our operations and maintain the high
product standards our brand is known for.
Position Summary
The Purchasing Manager/Buyer is responsible for sourcing, negotiating, and managing the
procurement of food ingredients, packaging, operating supplies, and other goods essential to supporting
our restaurant operations and commissary production. This role requires someone with strong experience
in the restaurant, foodservice, or food manufacturing industry, who understands ingredient sourcing,
distributor relationships, and the operational realities of a multi-unit environment. The ideal candidate is
proactive, detail-oriented, and skilled at managing vendors and costs while ensuring consistent product
supply across multiple states.
Key Responsibilities:
Purchasing & Procurement
- Source, evaluate, and purchase food ingredients, packaging, equipment, and operating supplies for
multi-state restaurants and commissary kitchens.
- Maintain accurate product lists, pricing files, vendor contacts, and order guides.
- Monitor inventory levels and collaborate with commissary and store teams to ensure consistent product
availability.
- Identify cost-saving opportunities and negotiate pricing and terms with suppliers.
- Manage purchase orders, delivery schedules, and lead times to prevent shortages or excess inventory.
Vendor & Supplier Management
- Build and maintain strong relationships with manufacturers, distributors, and regional suppliers.
- Ensure supplier performance meets expectations for quality, reliability, and pricing.
- Onboard new suppliers, negotiate agreements, and obtain competitive quotes.
- Coordinate with Sysco, US Foods, produce suppliers, and specialty vendors.
Quality, Compliance & Operations Support
- Ensure all products meet Dough Zone’s quality, food safety, and brand standards.
- Work closely with commissary and operations teams to resolve quality concerns or product substitutions.
- Support product testing, cuttings, and supply chain evaluations for new ingredient changes or menu
items.
Cross-functional Collaboration
- Partner with Operations, Marketing, and Commissary teams during new store openings, menu updates,
and promotional rollouts.
- Collaborate with Accounting/AP to verify invoices, correct discrepancies, and maintain price accuracy.
- Support Supply Chain leadership with forecasting based on historical usage and seasonal patterns.
Qualifications:
- 5+ years of purchasing experience required
- Proven experience buying food ingredients, packaging, or operations supplies.
- Strong negotiation skills and vendor management experience.
- Excellent communication, organization, and problem-solving abilities.
- Proficiency with Excel/Sheets; experience with ERP or inventory systems (Toast/Extrachef, Odoo, R365)
a plus.

- Ability to work efficiently in a fast-paced, multi-location environment.
- Able to travel when needed
- Experience working with national and regional distributors (Sysco, US Foods, etc.).
- Experience with restaurant inventory systems such as R365 is strongly preferred.
- Knowledge of food safety, ingredients, commissary production, and supply chain processes.
- Multi-unit restaurant purchasing experience.
