Now Hiring: Prep Cooks – Join our Casino Culinary Team!

We are currently seeking a dedicated and detail-oriented Prep Cooks to join our esteemed culinary team within our casino’s food and beverage department.

Position Summary:
Under direct supervision of the Sous Chef, maintains the highest standards of cleanliness of all kitchen food preparation utensils, counters, containers, serving, cooking equipment, and common areas. Precisely follows recipes and instructions regarding food preparation, presentation, and storage. 

Essential Duties & Responsibilities:
•    Consistently maintains the highest standards of cleanliness of all food preparation, including utensils, counters, and common areas in the kitchen. 
•    Follows recipes utilizing standard recipes when preparing each product.
•    Ensures production of prep items, checks prep list, and inventory on hand vs. projected needs to determine what items are needed for the day.
•    Ensures product rotation i.e. check walk-ins, shelves and new product received daily. 
•    Ensures that old and new prepped and un-prepped product is clearly marked with dates and rotated such that old product is issued and used first.
•    Ensures proper storage of product.
•    Maintains and operates equipment properly. 
•    Maintains a good communication with co-workers and guests and maintains a positive and professional work environment.
•    Contributes to a team effort and accomplishes related results as required.
•    Performs other duties as assigned.
Minimum Qualifications:
Minimum of one year prep cook experience, large volume prep cooking preferred.  Must be 18 years of age. Must be able to successfully pass a pre-employment drug/alcohol screen, random drug and controlled substance abuse tests, background investigation, obtain and maintain gaming license in Arizona and California. Tribal preference given to enrolled tribal members.

Called Camp Yuma in 1852, it became Fort Yuma after reconstruction. Transferred to the Department of The Interior and the Quechan Indian Tribe in 1884. It became a boarding school operated by the Catholic Church until 1900. California registered historical landmark No. 806. First registered June 1965. Plaque placed by the State Department of Parks and Recreation in cooperation with the Quechan Tribe and Squibob Chapter, E. Clampus Vitus, April 29, 1989. Largely an agriculture community, the Tribe leases its thousands of acres for agriculture to both Indian and non Indian farmers.
