Job description

$750 Hiring Bonus for new Team Members plus $50 in gas gift cards during our onboarding process.

Prepares and processes various cuts of meat as required, including correctly preparing beef, lamb, fish, seafood, poultry, and pork cuts. Provides excellent internal and external guest service while preparing all food in a quick and timely manner.

ESSENTIAL DUTIES AND RESPONSIBILITIES:

  • Perform quality inspections, use meat grinders, knives, saws, and other tools to cut meat down into smaller portions, weigh, price, and package cuts.
  • Prepare various cuts of meat as required, including correctly preparing beef, lamb, fish, seafood, poultry, and pork cuts, and labeling the type of cut, date, and destination of meat.
  • Weigh, measure, and mix ingredients. Ensuring proper storage and rotation of products.
  • Prepare products according to recipes, quality standards, presentation standards, and food preparation checklist.
  • Maintain butcher logs for food safety program compliance and food logs for all food products.
  • Keeping records for inventory values.
  • Monitor food quality while preparing food.
  • Coordinating deliveries and order pickups.
  • Set up and break down workstations. Wash and disinfect kitchen area, tables, tools, knives, and equipment. Complete cleaning checklists. Check and ensure the correctness of the temperature of appliances and food using thermostats and thermometers.
  • Ensure correct ordering, receiving, unloading, storage, and rotation of merchandise
  • Taking orders and managing their fulfillment; submitting orders into systems such as Eatec and Net Suites for proper invoicing and accounting.
  • Complete weekly work schedules, utilizing input from Executive Chef, and focusing on protecting business needs during peak times and maintaining payroll control.
  • Select items for weekly specials, advising the Steakhouse Chef while adhering to company sale price requirements and restrictions
  • Responsible for in-stock position
  • Meet waste goals for the department
  • Weigh, measure, and mix ingredients. Ensuring proper storage and rotation of products and following recipes for all manufactured items, i.e.-Hamburgers, Salisbury Steaks, Fish Cakes, and any products which require a recipe to be followed.
  • Prepare products according to recipes, maintain quality standards, presentation standards, and food preparation checklist.
  • Maintain butcher and temperature logs as required for food safety program compliance and food logs for all food products. Keeping records for inventory values.
  • Monitor food quality while preparing food.
  • Coordinating deliveries and order pickups.
  • Follow all company and safety and security policies and procedures; report maintenance needs, accidents, injuries, and unsafe work conditions to manager; complete safety training and certifications.
  • Other duties as assigned

KNOWLEDGE, SKILLS, AND EXPERIENCE:

Required

  • The ability to expertly cut, trim, and portion different types of meat.
  • Proficient and safe handling of various knives and other sharp tools.
  • A strong understanding of hygiene and safety standards to maintain a clean workspace and handle products properly.
  • Expertise on different meat types, cuts, and preparation techniques.
  • Familiarity with commercial butchering equipment and scales.
  • Ability to manage stock, check deliveries, and understand product storage and pricing.
  • Speak with others using clear and professional language. Develop and maintain positive working relationships with others; support team to reach common goals.
  • Must be able to function both independently and as a member of a team
  • Willingness to work various shifts, including weekends and holidays
  • Ability to meet attendance guidelines set forth in the Prairie Band Casino & Resort Team Member Handbook
  • Must present a well-groomed professional appearance and maintain uniform/appearance standards outlined in the Prairie Band Casino & Resort Team Member Handbook
