Job description

ROLE AND RESPONSIBILITIES This position is responsible for the execution of accurate food safety documentation and ensuring compliance with USDA FSIS regulations in a poultry processing environment. This role supports the HACCP system by reviewing production and QA records daily, maintaining current specifications and forms, and generating required reports for FSQA Management and USDA. The position is critical to ensuring regulatory compliance, audit readiness, and continuous food safety improvement. Daily Record Review Perform daily verification of all production HACCP, SSOP, QA and Production records for accuracy and completeness. Ensure all Critical Control Point (CCP) monitoring records are properly documented, signed, dated and within limits. Identify any errors, missing documentation, or other records deviations and notify appropriate supervisors or managers for correction. Follow up to ensure corrective actions are properly documented and closed. Conduct direct observations associated with programs and procedures to ensure that procedures are being followed as prescribed. Document & Specification Control Ensure departments are using the latest approved documentation. Control document revisions and archive obsolete documents per company policy. Reporting & Data Management Compile and generate weekly reports for FSQA Management and USDA Maintain logs for pre-operations, CCP Monitoring, Temperature Monitoring, PAA Monitoring, and other logs associated with HACCP Validations. Maintain organized electronic and hard-copy filing systems. QUALIFICATIONS AND EDUCATION REQUIREMENTS High School diploma or equivalent required; Associate degree in Food Science or related field preferred. 1-3 years' experience in poultry or meat processing environment preferred. Working knowledge of USDA-FSIS poultry regulations and HACCP principles. Strong understanding of CCP monitoring and food safety documentation. Proficiency in Microsoft Excel, Word, and data entry systems. Strong attention to detail and organizational skills. PREFERRED SKILLS Exceptional accuracy and documentation control. Ability to work in a fast-paced poultry production environment. Strong communication and follow-up skills. Ability to handle confidential regulatory documents. Strong time management and problem-solving skills.
