Oyster Farming involves cultivating oysters in controlled or semi-controlled environments, focusing on sustainable growth and quality. Shellfish Harvesting generally refers to collecting various shellfish, including oysters, from natural waters. While both roles involve working in coastal environments and may require similar certifications, oyster farming emphasizes aquaculture techniques, whereas shellfish harvesting is more about wild collection. Understanding these differences helps in choosing the right career path within the seafood industry.

What is oyster farming?

Oyster farming is the practice of cultivating oysters for commercial purposes, typically for food consumption. Farmers grow oysters in controlled environments such as cages, racks, or bags placed in coastal waters. The process involves obtaining oyster seed (juvenile oysters), nurturing them until they reach market size, and then harvesting them. Oyster farming supports sustainable seafood production and can also provide environmental benefits by improving water quality and creating habitats for marine life.

What are some typical challenges oyster farmers face during the growing season, and how can they be managed?

Oyster farmers often contend with environmental factors such as fluctuating water temperatures, salinity changes, and exposure to storms, all of which can impact oyster growth and survival. Disease outbreaks and predation by crabs or birds are also common challenges that require regular monitoring and proactive management. Successful oyster farmers routinely inspect their stock, maintain clean equipment, and stay informed about local water quality to mitigate these risks. Developing strong relationships with local regulatory agencies and participating in industry networks can also help farmers stay ahead of emerging threats and best practices.

What are the key skills and qualifications needed to thrive as an oyster farmer?

To thrive as an Oyster Farmer, you need knowledge of aquaculture practices, marine biology, and basic mechanical skills, typically supported by hands-on experience or relevant training. Familiarity with water quality monitoring equipment, boat operation, and shellfish handling regulations is important. Strong problem-solving abilities, physical stamina, and attention to detail help ensure effective farm management and product quality. These skills are critical to maintaining healthy oyster crops, meeting regulatory standards, and building a sustainable aquaculture business.

Job description

JOB DESCRIPTION

Cart-Driver | Line Cook / BOH

Cart-Driver is a wood-fired Neapolitan pizza restaurant, but that's only the beginning of what we do. Our kitchen is built around sound technique, disciplined execution, and a serious commitment to exceptional ingredients. We work closely with local farms and producers (Esoterra, Toohey & Sons, Switch Gears Farm, Grama Grass & Livestock, and other regional partners) and our menus reflect that relationship directly.

This is a high-standards kitchen with a strong, established team. We're selective because we've built something worth protecting.

What the Role Looks Like

All BOH team members are cross-trained across stations (Pizza, Sauté, and Oyster/Garde Manger) and are expected to support the kitchen as a whole. You'll execute mise en place and dishes to established standards, maintain a clean and organized station, handle food safely and correctly, and communicate effectively with both BOH and FOH teams.

Every cook on our team, regardless of position, has the opportunity to work directly with our farm partners, contribute to specials, and participate in menu development. We take that seriously.

Who We're Looking For

3+ years of experience as a restaurant cook. Strong fundamentals and a high personal standard. A team-first mindset that makes the people around you better. Experience with prep, sauté, pasta, pizza, or garde manger is a plus. Sunday and Monday availability required. Ability to lift 30+ lbs and stand for extended periods. Food safety knowledge and best practices.

What We Offer

$30–$40/hour total compensation via base pay, based on an equal tip-share model split across all hourly FOH and BOH staff. Full cross-training on all BOH stations. Health insurance eligibility after 90 days. Profit sharing eligibility after 6 months.

REQUIREMENTS
  • Kitchen experience +3 years
