Job description

Director Of Food & Beverage job at Retreat Hotels and Resorts. Perry, GA. Do you have what it takes to develop a new restaurant into a preferred dining experience for locals and hotel guests?

New Marriott Hotel Opening Soon

We are opening a dual-brand Marriott property at the Georgia National Fairgrounds in the late summer of 2025. Our primary food and beverage outlet will be the 1824 Kitchen and Bar. This is an opportunity to build a thriving restaurant and bar brand within the Perry community.

The Director of Food and Beverage is responsible for overseeing all aspects of the hotel's dining operations, including the restaurant(s), bar, room service, and events. Along with the indoor restaurant and bar, the hotel also features an outdoor Beer Garden with a covered stage. The outdoor space will host live entertainment as well as include a large projection screen TV to host Saturday afternoon college football and other sporting events. This leadership role demands a high standard of food and beverage service, drives revenue, controls costs, and motivates staff to exceed guest expectations. Within 6 months, the hotel will also incorporate room service and Uber Eats/DoorDash services.

Please note that this is not a fast food restaurant, nor does the restaurant utilize pre-packaged or microwaved foods. Only candidates with a true sit-down dining restaurant F&B experience will be considered.

Responsibilities
  • Manage daily food and beverage operations, including staff, training, scheduling, and performance management.
  • Oversee the brand standard hot breakfast.
  • Ensure top-tier service and customer satisfaction across all dining outlets.
  • Collaborate with the management team on menu development, pricing, and food quality.
  • Monitor inventory, order supplies, and control waste and food costs.
  • Implement and maintain health, safety, and sanitation standards.
  • Develop budgets and monitor departmental performance against targets.
  • Recruit, train, and inspire a high-performing F&B team.
  • Analyze guest feedback and implement service improvements.
  • Develop marketing and pricing strategies to drive local business, including drive-by business at the Georgia National Fairgrounds.
  • Provide beverage service to events hosted by the Ag Center.
Qualifications
  • 2+ years of experience in a food and beverage management role, preferably in a sit-down restaurant, hotel, or resort.
  • Note: Fast food management does not qualify for this position. Strong leadership, communication, and organizational skills.
  • Proven experience in budgeting, cost control, and revenue generation.
  • Knowledge of hospitality software (POS, inventory, scheduling).
  • Ability to work a flexible schedule, including evenings, weekends, and holidays.
  • ServSafe or equivalent certification preferred.
