Summary
The La Jolla Beach and Tennis Club Kitchen is seeking skilled Line Cooks (Levels 1-4) to join our culinary team. This part-time opportunity plays a key role in enhancing the overall dining experience for our guests.
Candidates of varying experience levels are encouraged to apply. You will work in a fast-paced kitchen environment, contributing to high-quality food preparation, consistency, and presentation.
Compensation:
Hourly rate ranges from $23.29 to $25.46, based on experience and skill level.
New hires receive a $250 bonus after 30 days of employment and an additional $250 after 120 days.
ESSENTIAL DUTIES AND RESPONSIBILITIES:
  • Prepares food in quantities according to menu and number of persons to be served in a timely manner.
  • Prepares a large variety of finished products (i.e.: salsas, chutneys, infused oils.)
  • Maintains work area and cooking equipment in proper and sanitary order.
  • Prepares and plates food to order in accordance with approved recipes.
  • Covers, dates, labels, and stores food items and ingredients during the scheduled shift.
  • Supplies plated starches, vegetables and miscellaneous accompaniments to hotline and receives plates from hotline for finishing with sauces and garnishes.
  • Prepares and presents menu items following recipes and designated presentation to include starches, multiple garnishes and soups.
  • Properly seasons all food items.
  • Communicates with expeditor to ensure smooth transition of finished plates to front of house.
  • Always tastes prepared items prior to serving.
  • Uses advanced knife skills to produce brunois, macedoine cuts, etc.
  • Responsible for complete setup of mise en place for all menu and related special items ten minutes prior to service.
  • Adheres to proper rotation and sanitation standards at all times.
  • Assures overall freshness, quality, and cooking temperature of finished products.
  • Properly closes and turns over work area at the end of shift assuring proper storage and minimal waste.
  • Attends regularly scheduled kitchen meetings.
  • Must obtain and maintain a current San Diego County Food Handlers Card.
  • Other duties may be assigned.

The proper performance of the line cook position will enhance the overall dining experience and ensure compliance with sanitation regulations. QUALIFICATION REQUIREMENTS

EDUCATION and/or EXPERIENCE

MATHEMATICAL SKILLS
Ability to add, subtract, multiply and divide. Ability to calculate figures and amounts such as discounts, proportions, percentages and volume.
REASONING ABILITY
Ability to apply common sense understanding to carry out instructions furnished in written, oral, or diagram form. Ability to deal with problems involving several concrete variables in standardized situations.

SCHEDULING
This company operates seven days a week, 24 hours a day. Shifts will generally be rotated as much as possible to be fair to everyone. At times it may be necessary to move you from your accustomed shift if business or task assignments demand (i.e. holidays, weekends, and high-volume business periods). In addition, it should be understood that business needs determine the number of hours that you work.
