Market Executive Chef - Salem, OR

We are looking for a dedicated Market Executive Chef to lead executive chefs and cooks within the assigned market, ensuring high-quality, healthy, and safe food service for patients, cafeteria, doctors’ dining room, and catering events.

Responsibilities

• Lead food preparation for patients, cafeteria, doctors’ dining room and special requests.
• Develop and implement work standards, sanitation procedures, and personal hygiene requirements in accordance with hospital rules and regulations.
• Monitor, audit, and inspect food preparation and serving areas, equipment, and storage facilities.
• Observe Executive chefs and cooks for health regulation compliance, enforce corrective measures as needed.
• Ensure portion control, proper plate service, presentation, garnish, etc., are maintained.
• Assess executive chefs’ performance related to customer service and satisfaction, making adjustments to achieve excellence.
• Oversee kitchen asset management, including preventive maintenance and equipment repair reporting.
• Maintain safety by reporting hazards (faulty equipment, spills, etc.) to Plant Operations and Maintenance.
• Spend approximately 50% of time in kitchen environment under varying temperature and noise conditions.
• Lead menu planning discussions and ensure accurate quantity decisions with executive chefs.
• Train and develop executive chefs, cooks, and production staff in culinary techniques.
• Serve as role model, ensuring highest level of customer service and adherence to corporate ethics.
• Supervise cooking staff for breakfast, lunch, dinner, and special functions.
• Maintain food budget provided by Division Director of FNS.
• Coordinate with Retail Manager and other parties to develop menus that drive sales.
• Perform additional duties as assigned by supervisor.
• Follow the Code, Mission and Value Statement, and related compliance programs.

Qualifications & Education

• Associate’s Degree or Technical Degree from Culinary Institute.
• Minimum 3–5 years of food service management experience.
• Culinary certification within 90 days of employment.
• Food safety certification within 60 days of employment.
