Job description

We currently have an opportunity available for a Junior Sous Chef to join our team. In this role, you will assist in supervising and executing food production for all Islington Golf Club’s food outlets. You will also supervise food production personnel, assist with food production tasks and assure that quality and cost standards are consistently attained.

What you will do:

  • Assist the Executive Chef/Sous Chef with monthly inventories, pricing, cost controls, requisitioning and issuing for food production
  • Prepare/directly supervise kitchen staff responsible for the daily preparation of: soups, sauces and “specials” to ensure that methods of cooking, garnishing and portion sizes are as prescribed by standardized recipes
  • Execute, guide and assist in preparation of line mise en place and production
  • Assume responsibility of the kitchen in the absence of senior staff
  • Assist in supervising and training employees, enforcing sanitation and safety practices, and menu planning
  • Maintain high standards of quality, cost, visual appeal and flavor of foods
  • Consult with dining service personnel during daily line-ups
  • Assist with new culinary team onboarding
  • Assist in food procurement, delivery, storage and issuing of food items
  • Submit ideas for future goals, operational improvements, and personnel management
  • Assist in ordering when there are shortages, ensuring ordering principals are upheld

What you bring:

  • Minimum of 3 years in a Senior Cook role
  • Completion of a Post-secondary Hospitality Degree, diploma or Equivalent
  • Red Seal or Equivalent
  • Experience in a Private Club environment- an asset
  • Strong organizational, leadership and communication skills
  • Flexibility- work schedules will include nights, weekends and holidays
  • Ability to work under pressure, maintaining composure
  • Ability to work well in a team environment
  • A passion for food, beverage and service is a must
