Job Description
A Mozzarella Maker is responsible for making fresh Mozzarella according to Eataly's authentic Italian recipe. Reports to the Fresh Market Manager.
  • Utilizes fresh mozzarella curd to heat, stretch by hand, and make housemade mozzarella and other pasta filata offerings fresh daily, according to Eataly recipes
  • Engages all senses: tastes, smells, feels, listens and observes all characteristics of each batch to maintain and elevate quality
  • Records daily the weight of ingredients used, batch sizes, and amounts transferred to other outlets
  • Makes variations in time cycles and ingredients used as necessary for succeeding batches
  • Cares for and handles products with careful attention to quality control and waste management
  • Weighs, packages and labels mozzarella lab offerings
  • Stocks display refrigerators neatly, accurately and in a timely manner
  • Provides guest service and information on mozzarella-making process to guests
  • Cleans work station thoroughly following food safety best practices
  • Ensures collateral supplies are in stock and being utilized properly in the lab
  • Performs other duties as required or assigned

Qualifications
  • Basic math skills
  • Good communication skills
  • Excellent attention to detail
  • Previous cheese making and/or food production experience preferred
  • High school graduate or equivalent preferred

Job Requirements
  • Availability to work a flexible schedule including weekends
  • Ability to lift up to 50 pounds
  • Ability to exert well-paced mobility for up to 8 hours, including standing, walking, bending and squatting
  • Ability to work within a kitchen production environment and use commercial kitchen equipment
