Chef Christopher Kostow of The Restaurant at Meadowood, Ciccio and Loveski Deli has created The Charter Oak as a gathering place for members of our community to celebrate occasions big and small.

We are looking for passionate, experienced, and motivated individuals to join our Kitchen team. If you have a culinary background and you are interested in a position, please reply and a member of our team will be in touch.
The Charter Oak is uniquely positioned as a large & vibrant restaurant that operates and sources primarily from its own Farm, located 1 mile from our grounds. Our Farm is situated on ~3.5 acres of world-class farm land in St. Helena. Our menus are reflective of what is happening in our microclimate with careful and diligent planning & execution from our Farm Management Team. 

JOB DESCRIPTION

-Receive, inspect, rotate, and store meat properly upon delivery.

-Ensure the freshness and quality of meat products by inspecting them for any signs of spoilage or damage.

-Store meats properly in refrigerators or freezers at the required temperature.

-Sharpen knives and maintain equipment such as meat grinder, slicer, cryovac, etc.

-Prepare and cut different types of meat, including beef, pork, poultry, and seafood, according to chef’s specifications.

-Weigh and portion meat or fish according to recipes or chef’s specifications while limiting waste.

-Clean equipment, reach-ins, and cold room to maintain health and sanitation standards.

-Assist with inventory management and rotation of stock to minimize waste, and notify chef when orders need to be adjusted.

JOB REQUIREMENTS

-Strong knowledge of different cuts of meat and the ability to accurately and efficiently prepare them.

-Exceptional knife skills and the ability to use various cutting and grinding equipment safely.

-Excellent attention to detail to ensure the quality and presentation of meat products.

-Ability to work in a fast-paced environment while maintaining accuracy and efficiency.

-Flexibility to work varying shifts, including weekends and holidays.

-Basic math skills for weighing meat products accurately.

-Physical stamina and strength to stand for long periods, lift heavy meat products, and perform repetitive tasks.
