Fill In Bartender information

What is a fill in bartender?

Fill in bartenders are professional bartenders who temporarily cover shifts when regular staff are unavailable due to illness, vacations, or other reasons. They are expected to quickly adapt to different bar environments, work with various teams, and provide consistent drink service to customers. Fill in bartenders must possess strong bartending skills, excellent customer service abilities, and flexibility to work varying hours, often on short notice. Their role is crucial in ensuring smooth bar operations and maintaining customer satisfaction during staff shortages.

What skills and qualifications are needed to thrive as a fill in bartender?

To thrive as a Fill In Bartender, you need a solid understanding of drink recipes, bar operations, and customer service, typically supported by prior bartending experience and, in some areas, a responsible beverage service certification. Familiarity with point-of-sale (POS) systems, bar tools, and inventory management software is important. Excellent communication, adaptability, and the ability to stay calm under pressure help Fill In Bartenders quickly integrate with new teams and clientele. These skills ensure smooth bar operations, customer satisfaction, and seamless transitions when covering shifts in different venues.

What is the difference between Fill In Bartender vs Barback?

AspectFill In BartenderBarback

Work EnvironmentFront-of-house, customer-facingBack-of-house, support role
CredentialsBasic bartending knowledge, possibly alcohol service permitNo specific credentials required

Fill In Bartenders focus on serving customers directly, while Barbacks support bartenders behind the scenes. Both roles are essential in bar operations, but Fill In Bartenders are more customer-facing, whereas Barbacks handle supply and cleanliness tasks to ensure smooth service.

What challenges do fill in bartenders face, and how can they prepare for success in different bar environments?

Fill-in bartenders often encounter the challenge of adapting quickly to new work environments, unfamiliar POS systems, and diverse drink menus. To succeed, it's important to be adaptable, communicate proactively with the regular staff, and review the bar's menu and house policies before each shift. Developing strong organizational skills and a friendly, professional attitude helps build rapport with both coworkers and customers, ensuring smooth service even in fast-paced settings.

Job description

Who We Are
At Hawkers Asian Street Food, our purpose is simple: we spark adventure. Everything we do is driven by three mantras that define who we are and how we show up every day. We always care - for each and every guest as if they are our only guest, and for our team as family. We never compromise - paying attention to the details and maximizing the potential in every team member and every experience. And we be disruptive - challenging the status quo, refusing to succumb to industry norms, and continually raising the bar.
If you're ready to bring that spirit to work every single day, we want you on our team.
What's in It for You?
  • Competitive hourly wage (commensurate with experience and market).
  • Tip share eligibility per restaurant policy.
  • Flexible scheduling with part-time and full-time opportunities.
  • Meal benefits during scheduled shifts.
  • Opportunity for growth within a rapidly expanding brand.

Position Summary
As a Bartender at Hawkers, you are the architect of the bar experience - crafting drinks, telling the Hawkers story, and creating the kind of energy that makes guests want to stay longer and come back often. This role demands genuine warmth, deep product knowledge, speed, and a team-first attitude every single shift. Maintain awareness of bar top guests, service tickets, dining room flow, and team needs at all times.
Requirements
Guest Experience & Service
  • Greet guests promptly and warmly upon arrival; respond to their needs accurately and in a timely manner throughout the visit.
  • Share the story of Hawkers - our inspiration, our cuisine, and our method of service - in a way that feels natural and engaging, not scripted.
  • Assess guest preferences and make confident, personalized beverage and food recommendations.
  • Take food and to-go orders as needed, entering them into the POS system accurately and without delay.

Bar Operations & Craft
  • Prepare alcoholic and non-alcoholic beverages for the bar and all guests, following Hawkers' recipes and quality standards on every pour.
  • Verify guest identification to ensure responsible alcohol service in compliance with all applicable laws and regulations; adhere to minimum age requirements as mandated by local and state law.
  • Exercise sound judgment regarding alcohol consumption and guest safety; involve leadership appropriately when needed.
  • Restock the bar with supplies and maintain par levels throughout the shift to ensure uninterrupted service.
  • Maintain a clean, organized, and sanitary bar area and all equipment throughout the shift.

Standards & Compliance
  • Process payments accurately using the POS system; handle all acceptable forms of payment with security and professionalism, settle tabs, and balance registers at the end of shift.
  • Must have or be willing to obtain Alcohol Service Certification (e.g., TABC, RBS, or state equivalent) and adhere to all OSHA and HACCP compliance standards.
  • Complete all required training courses and ongoing assessments; stay current on menu updates and procedural changes.
  • Complete all assigned opening, running, and closing side work thoroughly and on time.

Team & Culture
  • Maintain a positive attitude and ability to work well under pressure; support fellow team members at every opportunity.
  • Demonstrate schedule flexibility and availability to fill in as needed to support smooth bar and restaurant operations.
  • Perform additional duties as directed by management.

Qualifications
  • Must meet the minimum age requirement to serve alcohol as mandated by local and state law (currently 21 in NC and VA; 18 in other markets - verify with your General Manager).
  • Ability to work a flexible schedule including evenings, weekends, and holidays.
  • Must have or be willing to obtain Alcohol Service Certification (e.g., TABC, RBS, or state equivalent).
  • Must have or be willing to obtain a Food Handlers Certification.
  • Understanding of and commitment to OSHA and HACCP compliance standards.
  • Prior bartending or bar experience preferred; knowledge of classic and craft cocktail techniques a plus.
  • Success in this role requires genuine hospitality, urgency, adaptability, strong communication, and the ability to stay composed in a high-volume environment.
  • Familiarity with POS systems (Toast, Aloha, or similar) preferred.

Physical Requirements
  • Must be able to stand, walk, bend, squat, and reach above shoulder level for the duration of a shift.
  • Must be able to lift and carry up to 20 lbs.
  • Must be able to work at a sustained, fast pace in a high-noise, high-activity bar environment.
