Job description

Purely Juice and French Bakery LLC is launching a subscription-focused artisan bakery in Lake Oconee, Georgia, delivering fresh, handcrafted breads and pastries to upscale gated communities, including Reynolds Lake Oconee and Harbor Club.

We're not interested in mass production. We're bringing old-world baking traditions to a modern concept through long-fermented sourdoughs, flaky croissants, traditional German rye breads, and carefully crafted French and European pastries

The exciting part? We're buidling the bakery with our chef in mind. From ovens and proofers to tools and production flow, you'll have the opportunity to provide input as we develop a kithcen designed for exceptional artisan production.

Responsibilities

  • Lead daily production of artisan French and German breads, including baguettes, pain au levain, brioche, sourdough, and rye breads
  • Produce high-quality pastries, including croissants, pretzels, strudel, and other specialty items
  • Manage the complete baking process, including mixing, fermentation, shaping, proofing, scoring, steaming, and baking.
  • Develop, test, refine, and standardize recipes.
  • Help establish efficient kitchen workflow and production systems.
  • Maintain exceptional standard for consistency, presentation, freshness, and food safety.
  • Manage ingredient inventory, ordering, waste, and quality control.
  • Prepare and package products for customer orders and subscription deliveries
  • Assist with selecting bakery equipment and establishing an efficient production environment
  • Help develop and train the bakery team as the operation grows

Skills & Experience

  • 2+ years of professional artisan baking experence preferred
  • Strong knowledge of sourdough, laminated doughs, fermentation, hydration, proofing, scoring, and traditional bread-making techniques
  • Experience producing French, German, or European-style breads and pastries is strongly preferred
  • Excellent attention to crust, crumb, texture, flavor, consistency, and presentation.
  • Creative, organized, dependable, and able to perform well in a fast-apced production environment
  • Comfortable with early-morning production schedules
  • Leadership experience or the ability to train and develeop future bakery staff is a plus.

We're looking for more than someone who can follow recipes. We want a baker who genuinely loves the craft-someone who gets excited about fermentation, perfect scoring, beautiful lamination, and the smell of fresh bread coming out of the oven.

This is an opportunity to help build something from the ground up and have a meaningful voice in how the bakery develops.

Requirements

This is a full-time, hands-on position based in the Lake Oconee, Georiga area. Candidates must be willing to relocate if they do not currently live nearby. Relocation assistance may be available for the right candidate.
