Position Summary
The Pizzaiolo is responsible for producing high-quality pizzas and dough products while maintaining consistency, speed, and craftsmanship in a fast-paced kitchen environment. This position requires expertise in dough preparation, fermentation, stretching, baking, oven management, and ingredient quality. The Pizzaiolo plays a critical role in delivering an exceptional guest experience by ensuring every pizza meets company standards for quality, presentation, and execution.
Essential Duties & Responsibilities
Pizza Production
  • Prepare pizza dough from scratch following established recipes and fermentation schedules.
  • Monitor and manage all stages of dough production, including mixing, proofing, portioning, and storage.
  • Hand-stretch and prepare pizzas to company specifications.
  • Maintain consistency in product quality, portioning, and presentation.
  • Operate and manage pizza ovens efficiently to ensure proper bake quality and timing.
  • Monitor oven temperatures and adjust cooking methods as necessary.
  • Ensure all pizzas are prepared and served according to company standards.
Kitchen Operations
  • Maintain an organized, clean, and efficient pizza station.
  • Assist with daily prep and production needs.
  • Properly receive, store, rotate, and label products according to company standards.
  • Monitor ingredient levels and communicate inventory needs to management.
  • Minimize waste through proper product handling and production planning.
Quality Control
  • Inspect ingredients daily to ensure freshness and quality.
  • Maintain consistency in dough production and finished products.
  • Follow established recipes and preparation procedures.
  • Uphold presentation standards for all menu items.
Food Safety & Compliance
  • Follow all food safety, sanitation, and workplace safety standards.
  • Ensure compliance with local health department regulations.
  • Maintain proper food handling, storage, and temperature controls.
  • Adhere to company policies and HACCP procedures.
Qualifications
Required
  • Minimum 2 years of experience working in a pizza-focused restaurant or high-volume kitchen.
  • Experience producing pizza dough from scratch.
  • Strong understanding of dough fermentation and handling techniques.
  • Ability to work efficiently in a fast-paced environment.
  • Ability to lift and carry up to 50 pounds.
  • Ability to stand for extended periods.
  • Availability to work nights, weekends, and holidays as needed.
Preferred
  • Experience with wood-fired, gas-fired, or deck ovens.
  • Knowledge of dough hydration, fermentation schedules, and recipe scaling.
  • Experience training junior team members.
  • Culinary education or equivalent hands-on experience.
