Sous Chef – Double Knot

Double Knot, one of Schulson Collective’s most celebrated concepts, is seeking an exceptional Sous Chef to help lead its high‑volume, multi‑dimensional culinary program. This is a rare opportunity to join the leadership team of a flagship restaurant known for its award‑winning sushi, robatayaki, and modern Japanese‑inspired cuisine — all within a design‑forward, hospitality‑driven environment.

About the Role

The Sous Chef will support all culinary operations at Double Knot, ensuring consistency, precision, and excellence across sushi, robata, and hot kitchen stations. In partnership with senior culinary leadership, this role helps uphold the refined guest experience that defines the restaurant. You will mentor cooks, maintain rigorous standards, and serve as a steady, composed presence on the line while advancing the culinary vision of the concept.

 
Responsibilities
  • Support the Executive Chef in leading, training, and developing a large BOH team with a focus on professionalism, technique, and accountability
  • Ensure flawless execution and consistency across all menu items and stations, including sushi and robata
  • Maintain high standards for quality control, sanitation, prep systems, and daily production
  • Assist with food cost management, inventory, ordering, and vendor relationships
  • Partner with FOH leadership to ensure seamless service and exceptional guest satisfaction
  • Contribute to menu development, seasonal changes, and culinary innovation
  • Model a calm, polished presence during service and set the tone for kitchen culture
Qualifications
  • 3–5+ years of culinary leadership experience in a high‑volume, upscale or fine‑dining environment
  • Strong technical foundation; experience with Japanese cuisine, sushi, robata, or modern Asian flavors strongly preferred
