What is the difference between Cultivated Meat vs Food Scientist?

AspectCultivated MeatFood Scientist
CredentialsBiotechnology or food science degrees, lab experienceFood science, chemistry, microbiology degrees
Work EnvironmentLaboratories, biotech facilities, production plantsResearch labs, food manufacturing facilities, testing labs
Industry UsageDeveloping lab-grown meat productsFood product development, quality control, safety testing

While both roles involve food and science, Cultivated Meat specialists focus on creating lab-grown meat products using biotechnology, whereas Food Scientists work on developing, testing, and improving various food products across the industry.

What is cultivated meat?

Cultivated meat, also known as lab-grown or cell-based meat, is real animal meat produced by cultivating animal cells directly in a controlled environment, without the need to raise and slaughter animals. This innovative process involves taking a small sample of animal cells, providing them with nutrients, and encouraging them to grow into muscle tissue that can be harvested as meat. Cultivated meat aims to offer a more sustainable and ethical alternative to conventional meat, reducing environmental impact and animal suffering.

What are the key skills and qualifications needed to thrive in a Cultivated Meat Scientist role, and why are they important?

To thrive as a Cultivated Meat Scientist, you need a strong background in cell biology, tissue engineering, and bioprocessing, often supported by a degree in biotechnology, bioengineering, or a related field. Familiarity with bioreactors, cell culture techniques, and analytical tools such as HPLC and qPCR, as well as relevant certifications in lab safety, is typically required. Strong problem-solving abilities, collaboration, and adaptability are crucial soft skills for driving innovation in a rapidly evolving industry. These competencies enable the development of scalable, safe, and high-quality cultivated meat products that meet industry standards and consumer expectations.

What are some typical challenges faced by professionals working in cultivated meat production, and how can they be addressed?

Professionals in cultivated meat production often encounter challenges such as optimizing cell culture conditions, ensuring product scalability, and maintaining strict food safety standards. These tasks require close collaboration with cross-functional teams, including bioprocess engineers, food scientists, and quality assurance specialists. Staying updated on the latest advancements in bioreactor technologies and regulatory requirements can help address these challenges, as can participating in continuous training and knowledge sharing within the team.

Job description

Description
Tufts University invites applicants for tenure-track positions at the Assistant, Associate, or Full Professor level as part of a focused effort to further strengthen key research areas in cellular agriculture, including cultivated meat, alternative proteins, plant-based systems and related biotechnology approaches to next generation foods. While the Tufts University Center for Cellular Agriculture's administrative home is situated in the School of Engineering's Biomedical Engineering Department, we are searching for a faculty member whose primary home will be in Chemistry or Biology. Candidates will be considered at all ranks. The anticipated start date is January 2026 or later. The positions will add to the University-wide programs on future foods and in particular the Tufts University Center for Cellular Agriculture (TUCCA). Strengths in areas such as: new cell sources from cell culture of non-model systems, differentiation of specific cell lineages from animal stem cells, microbial-animal cell co-cultures to optimize growth and nutritional content, genetic stability of animal cells related to phenotypic factors, sensory and chemical analysis of cultivated and alternative food systems, the development of analytical and sensing technologies for low-cost food sensors and food safety monitoring, and the design of materials that support cell growth and tissue development. Additionally, we encourage applicants in areas of consumer analysis, environmental sustainability, technoeconomic analysis, nutrition, sensory analysis, computational approaches, and related areas associated with future foods. Additional information about the program can be found at: https://cellularagriculture.tufts.edu/.
Tufts distinguishes itself by the interdisciplinary focus and integrative nature of its education and research programs, within the environment of both a "Research 1" university and a top-ranked undergraduate institution. We offer the best of a liberal arts college atmosphere, coupled with the resources of a major research university. Home to nine graduate and professional schools across four campuses, Tufts University prides itself on its culture of cross-school partnerships. Tufts' Medford/Somerville campus is located only six miles from historic downtown Boston, facilitating extensive opportunities for academic and industrial collaborations, as well as participation in the rich intellectual life of the region.
Qualifications
Candidates should possess an earned doctorate in a field related to future foods or a closely related discipline. The successful candidates are expected to develop and maintain an active, highly visible research program and to demonstrate excellence in teaching, including core research subjects, and in mentoring both undergraduate and graduate students. We seek individuals who embrace opportunities to work collaboratively among departments and schools to continue to build a leading program in future foods across the University.
Application Instructions
Candidates should submit their application including: cover letter; curriculum vitae; 3-page research statement; 2-page teaching interests and objectives; 1-page diversity statement; 3 letters of references online through Interfolio at apply.interfolio.com/166326. The cover letter should be addressed to: Future Foods Search Committee, Tufts University, 4 Colby Street, Medford, MA 02155.
Candidates are encouraged to demonstrate attention to diversity and inclusion as it relates to teaching, research, and scholarship throughout their application. For full consideration, applications should be submitted by September, 2025. Application review will proceed on a rolling basis and continue until the positions are filled.
