Requires valid California Drivers License. Must provide DMV report prior to offer being made. No driving infractions 5 years prior to hire or during time in this job. Infractions include DUI, Suspended or Revoked License, Reckless Driving.

JOB RESPONSIBILITIES

IF ASSIGNED TO SOUTH OR WEST CAMPUS:
DISH ROOM
Thoroughly cleans all cooking implements, equipment, and serving pieces. Stores clean items in correct location.
Clear dirty trays from cafe and patient carts.
Delivers and pick up patient carts to and from units.
Sweeps and mops floors, washes work tables, walls, and refrigerators.
Scrapes food from dirty dishes, pots and pans and washes them by hand or places them in a dishwashing machine.
May transfer supplies and equipment between storage and work areas by hand or use of a hand truck or cart.
Cleans equipment using appropriate chemicals to ensure sanitary standards.
Works on any station of tray line as assigned. Check tray for accuracy to menu.
Moves carts loaded with dishes or trays to appropriate areas as needed.
Delivers patient trays upon request.
Correctly operates dishroom equipment.
Checks and documents dish machine temperatures. Takes appropriate action if temperatures are not within acceptable range.
Disposes of garbage according to department standards.
Keeps all work areas clean and orderly.
COLD FOOD PRODUCTION
Assists with catering setup and cleanup as needed.
Responsible for food preparation.
May be expected to taste products, read menus, estimate food requirements, check production, and keep records in order to accurately plan production requirements and requisition supplies and equipment.
Moves cases of food to production areas as needed.
Works on any station of tray line as assigned. Checks tray for accuracy to menu.
Thoroughly cleans all cooking implements and kitchen equipment as needed.
Cleans and stocks each work area.
Delivers patient trays upon request.
Monitors all Food Service areas to ensure that all foods are properly covered, labeled and dated.
Disposes of garbage according to department standards.
PATIENT HOST
Visits patients for food selections and food preferences ensuring that meal selections are within the parameters of the patient's therapeutic diet.
Delivers patient trays as needed utilizing appropriate patient identification technique.
Monitors pantry areas, records refrigerator temperatures, and replenishes and records food supplies according to par levels.
Maintains Patient Rands in Diet Office.
Assists with Catering Assignments including food preparation, room set-up, replenishing of items, and clean-up.
Monitors all Food Service areas to ensure that all foods are properly covered, labeled and dated.
COOKS HELPER

Follows HACCP guidelines and practices when preparing, cooking and serving food.
Consistently reads and follows all recipes.
Assists cook in food preparation as assigned.
May be assigned to work in tray line.
Thoroughly cleans all cooking implements and kitchen equipment as needed.
Monitors all Food Service areas to ensure that all foods are properly covered, labeled and dated.
Cleans and stocks each work area.
Disposes of garbage according to department standards.
RETAIL AREA
Provides excellent customer service: takes food orders, serves food, and prepares food for all customers patronizing the hospital food service locations.
Operates a cash register (or equivalent), receiving payments of cash, and charges from customers or employees for goods or services, makes change and issues receipts or tickets to customers.
Records amounts received and may be expected to total and summarize funds received, prepare bank deposits and verify cash at the beginning of a shift. Must understand and follow the KH cash handling policies and procedures.
Additionally, may assist in locating, reconciling and verifying the accuracy of transactions; and operates equipment with peripheral electronic data processing.
May also be required to prepare for service before the meal and clean the dining room after the meal (wipes tables, sweeps/mops the floor, cleans chairs, and otherwise, ensuring the acceptable appearance of the dining area).
Maintains proper security of cash at all times. Sets up and stocks the beverage area or other assigned areas may also be required.
Assists with catering setup and cleanup as needed.
Thoroughly cleans all cooking implements and kitchen equipment as needed.
Disposes of garbage according to department standards.
May assist in delivering patient trays upon request.
Monitors all Food Service areas to ensure that all foods are properly covered, labeled and dated.
IF ASSIGNED TO MAIN CAMPUS:
Sets-up trayline station prior to the beginning of trayline. Assembles trays as a team, keeping conversation to patient information only and utilizing food safety and sanitation measures. Cleans and organizes trayline station at the end of trayline ready for the next meal.
Stocks trayline with appropriate level of food and supplies before next service period.
Meets Tray accuracy requirements.
Follows proper procedure of dish washing (scrape, soak, stack, etc.) utilizing appropriate dish racks for the type of dish being washed.
Moves clean dishes to correct plate warmers or cold food area and trays, lids and silverware to appropriate areas.
Cleans and sanitizes carts. Assures drain plugs are in place and in good condition.
Scrapes food into trash cans while using garbage disposal for rinsing prior to placing in cleaning sink. Assures that utensils do not get into disposal.
Rolls silverware.
Disposes of garbage according to department standards. Double lines trash cans and empties when 2/3 full. Utilizes appropriate cart to transfer garbage. Cleans up any leaking bags. Cleans and sanitizes trash cans.
Sweeps and mops floors in Tray make up area. Cleans and sanitizes work areas and equipment as assigned.
Uses correct chemicals for cleaning. Follows proper safe handling procedures including the use of necessary personal protective equipment (PPE).
Additional
Demonstrates the knowledge and skills necessary to provide care and services appropriate to the population served on the assigned unit or work area.
Performs other duties as assigned.
