What is a contract caterer?

Contract caterers are companies or individuals hired to provide food and beverage services for organizations, events, or institutions on a contractual basis. They typically manage all aspects of food preparation, service, staffing, and sometimes menu planning according to the client's requirements. These services are often used by businesses, schools, hospitals, and event venues that prefer to outsource their catering rather than operate their own kitchens. Contract caterers can offer a wide range of cuisine options and service styles, from casual buffets to formal dining. Their flexibility and expertise make them a popular choice for organizations seeking reliable and professional food service solutions.

What are common challenges faced by contract caterers and how can they be managed?

Contract caterers often face challenges such as fluctuating client demands, managing food costs, and ensuring consistent quality across multiple locations. Effective communication with clients and staff, careful menu planning, and strong supplier relationships are key strategies to address these issues. Additionally, staying adaptable to changing dietary trends and regulations helps maintain high standards and client satisfaction in a dynamic environment.

Job description

Assistant Director of Sales and Catering

Juniper Preserve is looking for an Assistant Director of Sales and Catering to lead our Group Sales and Event/Catering Sales teams and serve as a true right hand to the Director of Sales and Marketing. Location: Juniper Preserve, Pronghorn Club Dr, Bend, OR 97701, USA

ESSENTIAL DUTIES AND RESPONSIBILITIES Team Leadership
  • Directly lead and manage the Group Sales team and the Catering Sales team, including dayโ€‘toโ€‘day coaching, performance management, and professional development
  • Set clear expectations, hold team members accountable to production and service standards, and step in to problemโ€‘solve when deals or events hit friction
  • Serve as a secondary point of escalation for clients and staff, resolving issues before they require the Director's involvement
Group Sales and Catering Sales
  • Drive group, corporate, and association business from prospecting through contract signature
  • Oversee the catering sales process, ensuring seamless communication between sales, events, and operations
  • Personally manage a portfolio of key accounts and highโ€‘value groups as needed
  • Support wedding sales and planning as needed; prior wedding experience is a strong plus given Juniper Preserve's growing wedding business

  • Maintain accurate forecasting, pipeline management, and reporting in iVvy
  • Identify and fix process gaps between sales, events, and operations before they become guestโ€‘facing problems
  • Partner with Revenue Management to align group strategy with overall resort revenue goals
  • Represent the sales and catering function in leadership meetings and crossโ€‘departmental planning as a proxy for the Director when needed
Strategic Support
  • Take ownership of special projects and initiatives that support departmental and resortโ€‘wide priorities
  • Bring creative solutions to recurring challenges rather than escalating every issue upward
QUALIFICATIONS
  • 5 to 10 years of sales and catering experience in a resort or highโ€‘volume hotel/event environment
  • Proven experience selling to groups, corporate clients, and associations
  • Wedding sales or planning experience is a plus
  • A track record of leading or mentoring a team, with the ability to coach, hold accountable, and develop talent
  • Strong problemโ€‘solving instincts and the flexibility to shift priorities as the business demands
  • Excellent communication skills across guests, clients, vendors, and internal teams
  • Comfort working in a CRM/catering system (iVvy experience a plus)
  • A collaborative mindset paired with the confidence to make decisions and own outcomes independently
