About Us

Three Brothers Wineries & Estates is a one-of-a-kind, all-encompassing winery/brewery/cidery production operation in the Finger Lakes of upstate New York. We make wine for three separate brands under the Three Brothers umbrella, craft beer under our War Horse Brewing Co. brand, and hard cider under our Apple Bombshell brand.

Our brewery and cider teams love exploring different techniques and styles to create an array of flavor combinations that appeal to a wide customer base. Creativity, innovation, learning, experimentation, and a genuine love for the Finger Lakes region are at the forefront of how our production operates. The Role

As Head Cider Maker, you'll own all responsibilities related to the fermentation and production of package-ready, shelf-stable cider. You'll uphold the quality the Apple Bombshell brand has represented over the years while continually pursuing new and better ways to make our product. You'll understand leadership's vision and bring it to life through the products you craft - with plenty of room for your own creativity along the way.


Key Responsibilities:

Production & Fermentation

  • Coordinate juice receival (tanker emptying) for fermentation.
  • Conduct and manage large-scale fermentations to produce clean-smelling, clean-tasting, shelf-stable base cider.
  • Coordinate tank space on the cider side of production, including any other products occupying those vessels.
  • Operate the crossflow filter for cider production.
  • Maintain, monitor, and record free sulfur levels in base cider tanks.
  • Handle blending, barrel work, keg cleaning and filling, and packaging line support.

Planning & Inventory

  • Track current product inventories and sales data, project inventory needs, and work with the Production Manager to ensure product is packaged on time in both kegs and cans.
  • Order fermentation materials and work with the Production Manager on timely ordering of finished-cider ingredients - flavors, sweeteners, acids, enzymes, and anything else that goes into the cider.
  • Conduct inventory audits.

Recipe Development & Innovation

  • Lead recipe development and bench trials, logging all information in writing and in Ekos where applicable.
  • Continually pursue ways to improve your professional knowledge through outside learning.
  • Stay on the lookout for new ideas.

Team & Facility

  • Be available for questions about cider production, cider production videos, and part-time staff training.
  • Keep an impeccably clean and sanitized work area - equipment cleaned and put away daily, fittings clean, above and below tanks clean, lab glassware spotless. The mindset: our production facility is in constant "tour ready" condition.
