This role will be located at one of Discovery Land Company's locations: Atlantic Fields, set outside of Hobe Sound, FL
Atlantic Fields is seeking a Chief Steward to join the Culinary Department.
The Chief Steward will be responsible for overseeing and inspecting the cleanliness of the kitchens and food preparation areas while supervising a small group of staff that are an integral part of the Culinary Team. The Chief Steward will ensure compliance with federal, state, and local safety regulations and will be responsible for inventory and kitchen equipment management. In this role, you will be part of creating the Discovery Land Company experience for our members and fellow employees.

Key Responsibilities

Develop and implement strategies for stewarding area that are aligned with the company's culinary and food & beverage objectives.

Create an environment for employees that is aligned with the company culture through constant communication and reinforcement.

Deliver the company experience for guests and employees.

Develop and implement strategies for attracting and retaining employees.

Manage the operation of the steward department; train employees on proper cleaning methods and operation of the equipment.

Direct steward personnel in the cleaning of floors, work surfaces, etc.

Schedule employees based on business demands, special projects and special events.

Coordinates with night cleaning staff to ensure expectations are maintained.

Support the luxury dining experience by maintaining supplies for food and beverage service.

Attends Banquet Event Order (BEO) meetings as necessary and maintains copies of BEOs adjusting and updating needs as changes to events occur.

Maintain par levels of stock; complete requisition for additional supplies as appropriate.

Monitor supply of clean dishware, glassware and pans; take corrective action to maintain supply level.

Ensure that all work surfaces are clean and sanitized regularly.

Check the proper operation of the dish machine/cleaning equipment daily.

Keep food and beverage areas clean.

Handles other duties as assigned


Qualifications

High school diploma or general education diploma (GED) is required.

Culinary Degree/Certification(s) or relevant on job experience recommended.

3 years managerial or leadership experience in high-end restaurant, resort, or hotel leadership position.

Minimum of one full year of stewarding or dishwashing experience in a luxury restuarunt or resort (preferred).

Knowledge of Banquet Services is preferred.

Working knowledge of all federal, state, and local food safety preparation standards and regulations.

Knowledge of Microsoft Office Suites.

Additional Requirements

Positive attitude, professional demeanor, and exceptional communication and interpersonal skills to deliver service to members, guests, and team members.

Must be able to work flexible work hours/schedule including evenings, weekends, and holidays. shift greater than eight (8) hours in length due to business demands.

Ability to work in a team environment.

Ability to stay calm and focused during the busiest of times.

Ability to read, write, speak, and understand English; additional languages preferred.

Ability to meet the physical demands of the position including, but not limited to, working indoors and outdoors in all weather conditions, standing, walking, and moving for periods of greater than eight (8) hours, and lifting and carrying items sometimes greater than fifty (50) pounds.

Flexibility and ability to pivot to new projects and a desire to work in a fast-paced environment.
