Position Summary


The Pastry Chef de Partie is a key member of the culinary team responsible for overseeing an assigned pastry station and ensuring the highest standards of food quality, presentation, consistency, and sanitation. Working within a luxury hotel environment, this position requires strong culinary technique, attention to detail, organization, and a passion for delivering exceptional dining experiences to guests.


The Pastry Chef de Partie will work closely with the Executive Chef, Sous Chefs, Pastry Chef, and other culinary team members to execute menus, maintain operational standards, and support a culture of excellence throughout the kitchen.


Essential Responsibilities

  • Oversee the daily operation of an assigned pastry station, ensuring all food is prepared to luxury-service standards.
  • Prepare, cook, and present menu items consistently according to established recipes, specifications, and presentation standards.
  • Execute mise en place efficiently and ensure the station is fully prepared for each meal period and service.
  • Maintain exceptional standards of flavor, quality, freshness, portion control, and presentation.
  • Assist with menu preparation, special events, banquets, and other culinary functions as directed.
  • Work closely with the Pastry Chef and Executive Chef to ensure smooth and timely service.
  • Monitor food quality throughout preparation and service and make adjustments when necessary.
  • Maintain proper food storage, labeling, rotation, and temperature-control procedures.
  • Follow all food safety, sanitation, and HACCP standards.
  • Maintain a clean, organized, and properly stocked workstation throughout the shift.
  • Assist with receiving and inspecting food deliveries as needed.
  • Minimize waste through proper preparation, portioning, storage, and utilization of ingredients.
  • Assist in training and mentoring Commis Chefs, apprentices, and other junior culinary team members.
  • Communicate effectively with the culinary team and front-of-house staff to ensure seamless service.
  • Support a positive, professional, and team-oriented kitchen culture.
  • Perform additional culinary and operational responsibilities as assigned by management.


Qualifications

  • Culinary degree or formal culinary training preferred.
  • 2+ years of professional culinary experience, preferably within a luxury hotel, fine-dining restaurant, resort, or upscale hospitality environment.
  • Strong knowledge of classical and contemporary culinary techniques.
  • Experience working in a high-volume, fast-paced kitchen environment.
  • Strong understanding of food safety, sanitation, and proper food-handling procedures.
  • Excellent organizational and time-management skills.
  • Ability to maintain composure and attention to detail during demanding service periods.
