Job description

Our company is growing with new stores coming to Long Island, and we’re excited to expand into our marketplaces! We’re seeking an Pasta/Mozzarella Assistant Production Manager for our Pasta & Mozzarella Department. This hands-on role focuses on crafting fresh pasta and mozzarella using Uncle Giuseppe’s authentic Italian recipes while supporting the overall operations of the department.

What You’ll Do:

  1. Make fresh mozzarella from curd and pasta from scratch, engaging all senses to maintain and elevate product quality
  2. Record daily ingredient weights, batch sizes, and amounts transferred to other outlets
  3. Adjust time cycles and ingredient quantities as needed to ensure consistent product quality
  4. Handle, weigh, package, and label pasta and mozzarella offerings with care and attention to detail
  5. Stock display refrigerators accurately and efficiently
  6. Assist the Production Manager with hiring, training, scheduling, and overseeing daily operations
  7. Provide guest service and educate customers about our pasta and mozzarella-making process
  8. Maintain a clean and safe workstation, following all food safety and sanitation practices
  9. Ensure department supplies are stocked and used properly
  10. Perform other duties as assigned

What We’re Looking For:

  1. High school diploma or equivalent required
  2. 3+ years of hands-on experience in pasta and/or mozzarella production, including working with doughs and curds by hand
  3. Knowledge of industrial equipment used in pasta and cheese production, with the ability to train staff on proper use and cleaning
  4. Strong attention to detail and excellent communication skills
  5. Ability to speak, read, and understand English
  6. Previous cheese-making or food production experience preferred
