What is a Carbone?

Carbone is not typically a job title; rather, it is most commonly known as the name of a famous Italian-American restaurant with locations in New York City, Las Vegas, and other cities. The restaurant is renowned for its classic Italian cuisine, vintage ambiance, and celebrity clientele. If you are referring to working at Carbone, typical roles might include server, chef, or bartender, each with their own responsibilities. It's always best to check the official restaurant website or reputable job boards for specific job descriptions and openings.

What are the key skills and qualifications needed to thrive as a chef, and why are they important?

To thrive as a Chef, you need expertise in culinary techniques, food safety knowledge, and typically a culinary degree or relevant kitchen experience. Proficiency with kitchen equipment, inventory management systems, and knowledge of health regulations is crucial. Creativity, leadership, and the ability to work under pressure are standout soft skills for this role. These skills ensure consistently high-quality dishes, efficient kitchen operations, and a positive dining experience for customers.

What are some common challenges faced by servers at Carbone, and how can applicants prepare for them?

Servers at Carbone often work in a fast-paced, high-energy environment where attention to detail and exceptional customer service are essential. One common challenge is managing multiple tables simultaneously while maintaining the restaurant's high standards for guest experience and professionalism. Applicants can prepare by developing strong multitasking skills, learning about classic Italian cuisine and wine pairings, and practicing clear communication with both guests and team members. Teamwork is highly valued, as servers frequently collaborate with kitchen staff and other front-of-house employees to ensure smooth service.

Job description

Major Food Group is hiring a talented Sous Chef to join our team at Carbone Miami!.
Our ideal candidates who will assist in carrying our culture, standards of service, and quality of food to the new location. Founded by Mario Carbone, Rich Torrisi, and Jeff Zalaznick, Carbone is one of the most celebrated Italian restaurants of the last decade. The New York Times probably put it best: “It is a fancy red-sauce joint as directed by Quentin Tarantino, bringing back the punch-in-the-guts thrills of a genre that everybody else sees as uncultured and a little embarrassing, while exposing the sophistication that was always lurking there. The restaurant has a technical prowess that can make you giddy and an instinct for sheer entertainment that makes a lot of other restaurants seem like earnest, unimaginative drones.”

  • Sourcing, ordering and receiving the highest quality ingredients
  • Developing, teaching, and maintaining all recipes and techniques
  • Executing menu items from start to finish
  • Organizing a large team and holding each chef accountable for their responsibilities
  • Overseeing and maintaining a smooth professional service
  • Maintaining all kitchen equipment and following up for any repairs needed
  • Maintaining high standards of cleanliness and organization
  • Overseeing scheduling and inventory to work within a set budget

Requirements:

  • 3 to 5 years of progressive experience in BOH Operations.
  • Michelin Rated restaurant experience is preferred.
  • Superior knowledge of back of house administrative duties a must
  • Proven ability in teaching and mentoring kitchen employees
  • Outstanding communication and supervisory skills
  • Self motivated and demonstrates quick thinking

Compensation: $75,000 - $80,000 annually based on experience
Benefits:

  • Competitive Salary
  • Medical/Dental/Vision Insurance with Company subsidy
  • Growth Opportunities
  • Progressive Paid Time Off
  • Parental Leave
  • Tuition Reimbursement
  • Generous Dining Allowance
