Job Summary
This position is tasked with the planning and implementation of ice cream and candy production
operations within Pecan Jacks Kitchen. They bear the responsibility of manufacturing and packaging
all Pecan Jacks products, which encompass ice cream and pints, pralines, brittles, caramel, toffee,
chocolate items, and waffle cones. Additionally, they are accountable for ensuring an adequate
inventory of all Pecan Jacks-made products and ingredients. Furthermore, they are entrusted with
maintaining the cleanliness and overall aesthetic of the kitchen.
Hours Required
• Average work week is 30-40 hours, depending on season, working weekends and nights until 10:00pm when
necessary (required)
Responsibilities
• Maintain confidentiality of all Pecan Jacks’ recipes and processes.
• Possess knowledge of all products and company history.
• Make products following Pecan Jacks’ approved ingredients, recipes, and processes.
• Package all chocolate and candy in boxes or bags using approved packaging processes.
• Keep all prep ingredients at required levels for ice cream, candy, chocolate, and waffle cones.
• Properly store products & ingredients with label and date information, using the FIFO method.
• Review sales of product with manager to establish pars on monthly or seasonal basis.
• Hands on awareness of product needs, sales, and freshness dates in store.
• Identify and communicate high and low inventory items to store manager for sales planning.
• Regularly inspect items for quality and document lost product.
• Inventory and order approved ingredient items for production.
• Maintain timely production efficiencies that are directly related to cost of all products.
• Lead and train staff that is assisting in the kitchen, verify and ensure approved quality is met.
• Follows proper sanitation/health department regulations for food handling and storage.
• Properly operate and maintain all equipment with care and safety.
• Take an active role in the inspection of all equipment for defects and potential problems.
• Keep kitchen production and storage areas clean and organized.
• Stock and rotate product using FIFO method. (First in First Out)
• Assists delivery drivers when deliveries are made, inspect, unpack, and put away orders received.
• General cleaning: dust, sweep, mop, wash windows, take out trash.
• Use shift check lists to achieve operational excellence in the kitchen.
• Maintain a professional working relationship with all staff.
• Demonstrate a positive and uplifting manner towards all customers, staff, and management.
• Responsible for any additional duties as assigned by manager or owner.
